Abstract: Duringrecentdecades,thestudyoffattyacids(FAs)belongingtothen-3familyinseafoodhasintensifiedduetotheir beneficialeffectoncardiovasculardisease.ThisstudywasundertakentodeterminetheFAcompositionofmusclelipidsofthre e differentfarmraised(Salvelinusalpinus,Salmotruttafario andOncorhynchusmykiss)fedthesamedietandraisedunderthe sameconditions.Palmiticacid(16:0)intotalsaturatedfattyacid(SFA)andoleicacid(18:1n-9)inmonounsaturatedfattyac id (MUFA)werethemostabundantFAsandsignificantdifferences(P<0.05)wereobservedbetweenfishspecies.Thedifferencesin totalSFAamongthetroutsweresignificant(P<0.01),and O.mykiss hadthehighest(31.92%)SFAcontentwhile S.truttafario showedthelowestintheirediblemuscletissue.However,therewasasignificantly(P<0.01)oppositeobservationforMUFAamong thetrouts,inwhichS.truttafariohadthehighestcontent(41.90%)ofMUFAintheirmuscletissuewhileO.mykiss hadthelowest (30.81%).Thedifferencesforthepolyunsaturatedfattyacid(PUFA)contentamongthespecieswerenotsignificant(P>0.05).O. mykiss hadthehighestn-3PUFA(22.41%)whileS.truttafarioshowedthegreatestn-6PUFAconcentration.Eicosapentaenoicacid (EPA,20:5n-3)concentrationswere3.07,3.03and1.78%in O.mykiss,S.alpinus andS.truttafario, respectively.Inaddition, O.mykiss hadahighercontent(19.17%)ofdocosahexaenoicacid(DHA,22:6n-3)than S.alpinus (15.45%)andS.truttafario (12.74%),andthedifferenceofthisFAamongthetroutswassignificant(P<0.01).Theratiosofn-3/n-6PUFAcontentindicating theavailabilityofn-3PUFAthatarebeneficialforhumanhealthwere1.58,1.27and0.95for O.mykiss,S.alpinusandS.trutta fario,respectively.Inconclusion,theresultsofthisresearchforFAanalysissuggestthesuperiorityofrainbowtrout(O.mykiss)for humannutritionintermsofn-3PUFAcontentsandtheeffectsonhealth.
