Grape varieties Vernaccia. Production area Lower Tirso valley, Sinis. Altitude A few metres above sea level. Climate Typically Mediterranean with mild winters, limited rainfall and very hot and windy summers. Characteristics of the soil “Gregori” is the typical poor sandy soil of the Tirso valley. It is the chosen terrain for the Vernaccia grape variety. Vine training system Adult vines are bush-trained, espalier (guyot and spurred cordon). Grape per hectare 3.000 - 4.000 kg. Winemaking Follows the traditional white winemaking process with soft pressing and fermentation at controlled temperature. Ageing Antico Gregori is crafted only in outstanding Vernaccia . For some years the original base wine from the 1976 was topped up with fractions of later vintages of the same wine, so as to revive the Flor yeast by a -like winemaking process; following an extended oxidative aging period, the wine was then blended with tiny amounts of very old Vernaccias, whose original base wine dates back to the first decades of the 20th century. Appearance Star bright topaz in colour with amber tinges. Aroma The nose is complex and layered with intense notes of hazelnut, honey and walnut husk alongside touches of pastry cream. Hints of salted peanuts and figs mark the close. Palate The warm, enveloping palate delivers unexpected freshness and savoury minerality while lending an amazing balance backed by the wine's hyper-extended finish. The flavours echo the aromas to perfection. Best served at 16 °C - 18 °C in a large glass, encouraging oxidation half an hour before pouring. Serving suggestions This wine pairs extremely well with bottarga roe specialties. We also love it with bottarga flavoured sheep milk cheese and spicy fig jam.
