Zucchini Noodles with Olive Oil and Garlic
Ingredients: 4 zucchini (about ½ lb. each), prepared with a julienne peeler or mandolin to resemble noodles 4 tbsp extra virgin olive oil 8 cloves garlic - sliced thin ½ tsp. crushed red pepper flakes Salt and pepper, to taste Fresh parsley or basil leaves Additional ingredients (fresh chopped tomatoes, roasted red peppers, sun-dried tomatoes, etc.)
Method: 1. Slice zucchini with julienne peeler, discarding the soft core. Toss the julienned zucchini generously with salt and let it sit for 20 minutes to remove excess water. Gently press the noodles with your hands to remove excess water. (This step ensures tender, rather than watery, noodles.) 2. Heat a large pan over medium heat and add the olive oil, garlic, and crushed red pepper, stirring with a spatula until the garlic is fragrant, about 30-60 seconds. 3. Add the prepared zucchini noodles and stir them for about 1 minute, make sure they are well coated. Turn off the heat and mix the parsley, basil, and black pepper into the noodles. Drizzle with extra olive oil if desired. 4. Add additional ingredients such as fresh chopped tomatoes, roasted red peppers, sun dried toma- toes, olives, etc. Serves 4 as an entrée
