Inspired by Eric Dolphy 1964's album "Out to lunch!" considered one of the best jazz albums of all time. All four courses are named after a jazz piece combined with the main rhythmical uses in jazz, Improvisation, Polyrhythms, Syncopation and Swung note.

Starter (Improvisation)

"A love Supreme" shellfish salad with "Blue in green" sea herbs

Note: A love supreme is the name of John Coltrane's album (1964). Blue in green is the name of the track taken from Miles Davis's album Kind of blue (1959)

Main (Polyrhythms)

"" hundred grams of chateaubriand accompanied by a "Grade A Gravy" for two to share

Note: Take five is one of the most representative pieces of jazz, composed by Paul Desmond and performed by The Quartet in their album Time Out (1959), considered one of the best jazz albums of all time. "Grade A Gravy" taken from 's album Smokin' with the Chet Baker quintet (1965)

Dessert (Syncopation)

"Sweet and Hot" chocolate micuit with a "Fine and Dandy" gran marnier crème anglese

Note: Sweet and hot is Ella Fitzgerald album released in 1955. Fine and Dandy taken from 's album Evening at home with the bird (1950).

A little "Star time" & "Bye-ya"

Note: Star time taken from Sun Ra's album The Nubians of Plutonia (1966). Bye-ya taken from Thelonious Monk's album Monk's Dream (1963)
