Over the years, he has opened 36 restaurants worldwide - including Ducasse in Paris, Ducasse at the Dorchester in London, Benoit in New York, Beige Alain Ducasse in Japan, and more. In 2011, Bruner- Yang opened Toki Underground, a ramen shop in Washington D.C. that is known to be crowd-drawing dishes inspired, by the time he spent caring for his grandfather in Taiwan. Bruner-Yang’s acknowledgements include James Beard’s “Rising Star Chef” in 2015, a semifinalist for “Best Chef, Mid- Atlantic” in 2016, and the RAMMY Award for Best New Restaurant in 2019 for his spot in the Line D.C. hotel Spoken English.
