While personal choice and dietary behaviors are major influences on how an individual eats, the environment influences these choices and behaviors. The nutrition environment is one key influence and its relationship with food choice, behaviors, and socioeconomic influences is complex. Within the structure of the nutrition environment, food access and socioeconomic status compound influencing nutrition behavior and food choice. Food deserts are defined as geographic region of low access to healthy affordable food in low income areas. The USDA developed a system for the analysis of food deserts in the United States. However, the methods the USDA uses do not acknowledge potential geographical barriers present in rural mountainous regions including Appalachia. The purpose of this research is to determine whether the USDA methodology underrepresents food deserts in Appalachia and to develop a modified analysis model for the region. The region was analyzed at the census tract level using methods based on USDA guidelines for low income, rurality, and grocery store identification, then applied in Geographic Information Systems (GIS) to roadway data. Network analysis of drive time from grocery stores to 20 minutes away was performed. Low income, rural census tracts with 33% of their area outside of 2 the 20-minute drive time zone were identified as food deserts. Counties containing tracts were then compared to USDA designated counties, using the dependent variables of obesity and diabetes diagnosis rates and controlled for by county level rurality and economic distress. Of the counties designated as rural, 63 contained food deserts by the modified methods and the USDA model identified 20, there was an overlap in identification of 12 counties. There was no significant difference for 2 methods in health outcomes for the counties. In conclusion, the modified methods do identify a larger food desert region. It is crucial to understand the geographic barriers to regions when addressing nutrition environment concerns. Pruitt** ABSTRACT Parents arejudged constantly, by fellow parents and by wider society. But the consequences ofjudgingparents may extend beyond community repu- tation and social status. One of the harshest potential consequences is the state's termination ofparentalrights. In such legal contexts, the state assess- es parents' merits as parents in relation to a wide array of their characteris- tics, decisions and actions, including where the parents live. Among those parents judged harshly in relation to geography are im- poverishedparents who live in ruralplaces. We argue that such judgments are unjust becausepoor ruralparents often do not have ready access to state support in the form of programs that would permit them to be better parents.

Davis Social Sciences Division, Dalton State College, Dalton, GA 30720 USA ([email protected]) Abstract: This paper explores the significance of the American chestnut on the ecology and culture of Appalachia. Until the third decade of the 20th century, the tree was the crowning glory of the Appalachian hardwood forest, in some isolated areas comprising half of the hardwood tree population. The wildlife of the region, particularly black bears, heavily depended on the tree for both sustenance and shelter. Native Americans in the mountains frequently made use of the nut, mixing chestnut meal with corn to make bread. White mountaineers gathered the nuts to sell or trade, and sometimes used parched chestnuts as a coffee substitute. The American chestnut played a major role in the economy of the Appalachian region, providing timber for dwellings and tannic acid for the leather industry. Finally, it is argued that the decline of Appalachian subsistence culture is directly linked to the loss of the American chestnut. INTRODUCTION Few single events in North American environmental history compare with the loss of the American chestnut. “The devastation of the American chestnut by the chestnut blight," wrote William MacDonald more than two decades ago, "represents one of the greatest recorded changes in natural plant population caused by an introduced organism." MacDonald, a professor of plant pathology at West Virginia University and the current acting treasurer of the American Chestnut Foundation, estimates that chestnut-dominated forests once covered 200 million acres of land from Maine to Mississippi (MacDonald 1978; Brown and Davis 1995).

Since social services are the bedrock of a cohesive society – meeting the needs of citizens with regard to employment, housing, education, social security and care – access to them should not be conditional upon living in geographically less isolated areas. Mankind discovered early that we can use these minerals to our advantage so therefore the industry of mining was created. Minerals such as emeralds, gold, and other beryl’s where considered precious and where sought after because of their beautiful looks. After these gems or precious stones were found they had to be cleaned and cut in specific ways but finding them was the hard part. The precious minerals and sought after not just because they are beautiful but also because they are rare. You can only find some gems in certain location in veins or isolated patches of land but after you find and treat these gems they can be among the most beautiful sights in the world. Precious Gems of the Appalachian Mountains 3 Gems are crystals that are formed when rocks are put under extreme pressure or heat and are made into a glassy looking stone. These gemstones are spread out through thousands of tons of rock and are often very small. Finding these gems is not an easy task. The North Carolina mountains are known for their abundance of minerals such feldspar, mica, and quartz but they are also known for their gems. Emeralds, aquamarine, beryl, tourmaline, garnet, rubies, and sapphires have been found in this region of North Carolina, each one in their own specific location or together in one cluster.

Faulkner4 Abstract This descriptive, causal-comparative study of pre-service agriculture education teachers (N = 438) enrolled in universities (n = 31) throughout the south sought to determine a difference in multicultural teaching concern. Variables in the study consisted of pre-service teachers with a with/without a multicultural education requirement, and pre-service teachers with a multicultural education requirement that is taught by an agriculture teacher educator. Results show a negligible effect size in teaching concern between pre-service teachers who have a multicultural education course requirement and pre-service teachers that do not. However, significant differences exist in teaching concern when an agricultural education teacher educator taught the multicultural education course. With the theory of Gay and Kirkland’s (2003) theory of cultural critical consciousness and self-reflection, the researchers provided recommendations for teacher educators, practicing teachers, organizations affiliated with agricultural education, and pre- service teachers. Keywords: cultural consciousness, teacher preparation, teaching concerns, diversity, multicultural education, pre-service teachers The beginning premise of multicultural education was for ethnic minorities to adopt mainstream values and behaviors of the dominant culture in vocational skills, civic duties, and democratic ideals (Banks, 2008). This later evolved after research revealed students being exposed to only Western-European, middle-class, Christian cultures, values, patterns of thinking and history while other cultures were being ignored (Gibson, 2004).
