Williamson replaced Gary Rikard, who retired in December of 2018. Williamson, a graduate, began his career with the department in 1990. “In nine out of ten auto burglaries, items such as purses, laptops, money— even guns, are stolen,” states Williamson. All of the city’s park signage has been recently upgraded, and renovations are underway to make some of the park restrooms ADA compliant. The parks department is also in the process of

r. Will Clem envisions a day when clean lab-grown meat will be produced for the same or less cost as the meat consumed today. Through his Memphis Meats startup, the Baby Jacks BBQ owner is working alongside some of the top minds in the world on the development of tissue- engineeredD meat. “If we can grow meat without having to worry about salmonella, botulism, listeria, or any of the food-borne illnesses, I think in the long run this will be the best way to produce meat,” said Clem. “That’s what’s most exciting to me about it.” Memphis Meats was founded four years ago in San Francisco, but it’s a project that has been in the works for the better part of a decade. Clem and stem cell biologist Nick Genovese met as students taking Ph.D. business classes at the University of Alabama at Birmingham. “I was studying a field called tissue engineering, and he and I got together and pitched the idea back and forth,” said Clem. “Years later, he gave me a call out of nowhere and said he was ready to start the company. We really didn’t expect it to blow up as big as it did.” They took their idea to a business incubator in San Francisco, and investors jumped all over the idea. An initial $2.3 million in seed funding was followed by $20 million over the next several months in Series A funding. “It really made a difference being in an incubator,” said Clem, who along with Genovese teamed up with third co- founding partner in Dr. Uma Valeti. “It’s going to take a lot of people a lot of long, hard work to grow this into an actual business. We’re making samples today. We can make a piece of steak or hamburger meat or meatballs, and let you taste it. But it’s extremely expensive and labor-intensive, so it’s not something we’re ready to sell in a restaurant yet.”
