hiyabucks.com | 23 Let’s all do our bit … This column has been running for a year now and I’ve learnt a lot about small things we can all do to make big changes to the environment, but bars of soap are just a step too far for me.

I’ll be honest, I prefer liquid hand soap to bars of soap. I’ve given it my best shot (12 months) but I can’t find a soap dish that I like that is hygienic and doesn’t always look a mess. I also thought by buying bars of soap in cardboard packaging I would be avoiding plastic. However, this isn’t the case as they (mostly) appear to be wrapped in plastic inside the outer cardboard. I am refilling my liquid hand soap container at one of Bucks many Refill Stations to avoid purchasing single use plastic. It isn’t necessarily the cheapest option which means being environmentally friendly can unfortunately increase the shopping bill.

Since I’ve been writing this column I’m much more aware of plastic rubbish I see caught up in trees as I know most of this will make it’s way into a stream, or a river and then eventually the ocean. The ocean is where the salt, the weather and the constant waves break plastic down into microscopic pieces, hardly visible to the eye, which is then swallowed by marine life. Needless to say, every time I eat fish now I’m thinking “how much plastic is there inside this fish?”. The film, A Plastic Ocean, really opened my eyes to this horrendous problem. Such is my concern, I’ve been known to stuff my pockets with plastic I’ve untangled from a tree. Yes ... I am that crazy woman. Just imagine, if everyone did that once a day, or once a week, how much plastic would be saved from going into the ocean?

Marlow has a new water refill station in Higginson Park, thanks to a member of Marlow Town Council and Council. Suzanne Brown has used her ward budget as a Wycombe District Councillor to pay for a water refill station on the edge of Court Garden House, while Wycombe District Council has paid for the connection. Phil Irving, a Marlow-based environmental professional on the environment working group said: "I am really excited that we have another refill point for the people of Marlow. It's becoming easier and easier to carry a water bottle and refill it. And that means fewer bottles bought, drunk and thrown away. Well done Suzanne Brown for making this happen." Residents and visitors to Marlow are also able to refill bottles free of charge at cafes, bars, restaurants and other businesses displaying Refill window stickers to show they have signed up to a free Refill app.

There is a repair revolution gathering pace in Buckinghamshire, and the County Council is encouraging people to take part in the county's Repair Cafés - and maybe even start one themselves in their local area. Repair Cafés are free meeting places where people come together to repair things. Visitors bring their broken items from home and, working together with specialists, make repairs which means that the item continues its useful life rather than becoming part of the vast amount of rubbish our society produces. And the idea is spreading! There are over 1,500 Repair Cafés worldwide, and Buckinghamshire is now home to three. The Marlow Repair Café has been going for over year, Aston Clinton has recently held its first event and Princes Risborough is just starting out. Bill Chapple OBE, Buckinghamshire County Council Cabinet Member for Planning & Environment, said: "It's been called the throwaway society – the tendency to simply replace an item with something new when the slightest fault or damage occurs.” "That's where the Repair Café comes in. On a damp and dreary January day we headed to the rural village of Hawridge. Our Buckinghamshire voyage of discovery started 7 years ago, and we are pleased to report we probably have another 7 years of discovery still to do. Hawridge, and the Full Moon pub, are one of our greatest discoveries.

hiyabucks.com | 31 Rachel’s creative cooking SMOKED SALMON AND DILL QUICHE This is an extremely easy, yet effective, quiche recipe with minimal ingredients. Feel free to swap the salmon and dill for something else if you'd prefer, just keep the same quantities.

SHORTCRUST PASTRY 250g plain flour pinch salt 140g chilled butter, cubed 1 egg 2 tbsp water

QUICHE FILLING 120g smoked salmon small handful of dill 3 eggs 300ml double cream salt and pepper

Sift the flour into a large bowl. Cut the butter into small pieces and add to the flour. Use your hands to rub the butter and flour together until you get a breadcrumb like texture. Mix the egg and water together in a small bowl. Add 2 tbsp of the egg mix to the crumb and use a cutlery knife to quickly and evenly distribute the liquid. This will begin to create flakes of pastry. Where the pastry seems dry or isn’t flaking, add another tbsp of egg mix. When all of the pastry has begun to come together, use your hands to lift it onto the table and knead it a tiny bit to make sure the texture is even throughout. Preheat the oven to 200ºC. Roll out your pastry to 3mm thickness, roll it up around the rolling pin and unroll it over a 24cm loose based flan ring. Gently press the pastry into all of the corners and then use your rolling pin to roll over the flan ring, which will cut away any excess pastry. If the pastry feels warm and a bit sticky, chill in the fridge for half an hour. Cut a large circle of baking paper and crumple it up as much as you can in your hands. Place it inside the pastry case and fill with baking beans. Blind bake the pastry for 15-20 minutes. Remove the baking beans and paper and bake for a further 5 minutes. Reduce the oven temperature to 15ºC. Whisk together the eggs and cream in a medium sized bowl. Tear the dill into small pieces and add in with salt and pepper. Tear the salmon and place it evenly around the pastry base. Pour the liquid over and carefully transfer to the middle shelf in the oven. Bake for 20 minutes until the liquid has cooked and set.
