Dietary factors are considered an important risk factor for the development of prostate cancer in addition to age, genetic predisposition, environmental factors, and other lifestyle factors such as smoking. Recent studies have indicated that there is a direct correlation between the occurrence of prostate cancer and the consumption of tomatoes and tomato-based products. Lycopene, one of over 600 carotenoids, is one of the main carotenoids found in human plasma and it is responsible for the red pigment found in tomatoes and other foods such as watermelons and red grapefruits. It has been shown to be a very potent antioxidant, with oxygen-quenching ability greater than any other carotenoid. Recent research has indicated that its antioxidant effects help lower the risk of heart disease, atherosclerosis, and different types of cancer-especially prostate cancer. Lycopene's Characteristics Lycopene is on of approximately 600 known carotenoids. Carotenoids are red, yellow, and orange pigments which are widely distributed in nature and are especially abundant in yellow- orange fruits and vegetables and dark green, leafy vegetables. They absorb light in the 400- 500nm region which gives them a red/yellow color. Only green plants and certain microorganisms such as fungi and algae can synthesize these pigments. -

My mom used to make lot of chutney recipes with vegetables like carrot chutney, chow chow chutney and radish chutney. But I love carrot chutney, because it has a balance of all flavors like sweet, tart, spicy and salt. It tasted so good with samai idly. You can also make this chutney without coconut. For a change, do try this easy carrot chutney recipe for idly or dosa .You will definetely enjoy the goodness of carrot. Ingredients for Carrot Coconut Chutney Recipe Preparation Time: 10 mins Cooking Time: 10 mins Serves: 3 • 2 Big Carrots, Grated • 2 Tbsp of Urad Dal (ulundu) • 3 Red Chilies (long) • 1 Tsp of Ginger, Grated • 1.5 Tbsp of Coconut (Dry Dessicated) • Pinch of Tamarind • Salt to taste • 2 Tsp of Oil • Water as needed To Temper • 1 Tsp of Gingelly Oil • 1 Tsp of Mustard • 1 Tsp of Urad Dal • Few Curry Leaves • Pinch of Asafoetida Method for Carrot Coconut Chutney Recipe • Wash, peel the skin and trim the edges of carrot. Grate it using grater and keep it aside. • Heat a pan with oil, when it is hot, add urad dal, onion and red chilies until it turns golden brown.Add ginger and coconut, fry for a min. Finally add grated carrot, tamarind and salt, fry until raw smell vanishes. -

Source: hWp://www.vegrecipesofindia.com South Indian Coconut Curd Chutney Serve with Idli or Dosa (as in photo, recipe next page) Serves 2-3 Ingredients (Main) • ½ cup grated coconut, fresh or frozen • 4 Tbsp roasted chana dal (roasted husked bengal gram), see photo • 4 Tbsp yogurt (curd) • ½ inch ginger, chopped • 1 or 2 green chilies, to taste • 5 - 6 Tbsp water for grinding the chutney • salt as required Ingredients (Tempering) • 10-12 curry leaves • 1 tsp mustard seeds (rai) • a pinch of asafoe4da (hing), see photo • 1-2 dry red chilies • 1 Tbsp oil Roasted Chana Dal Instruc(ons • In a bowl first whisk the yogurt 4ll smooth. • Put the coconut, roasted chana dal, ginger, green chili and water in a chutney grinder. Grind un4l the whole chutney mixture is smooth. • Mix the chutney with the whisked yogurt. Season with salt and keep aside. • Heat oil in a small pan. Crackle the mustard seeds. • Add the red chilies, curry leaves and asafoe4da. • Fry for a few seconds un4l the curry leaves start to become crisp. Fat-Soluble Vitamins & Micronutrients: Vitamins A and E and Carotenoids Vitamins A (retinol) and E (tocopherol) and the carotenoids are fat-soluble micronutrients that are found in many foods, including some vegetables, fruits, meats, and animal products. Fish-liver oils, liver, egg yolks, butter, and cream are known for their higher content of vitamin A. Nuts and seeds are particularly rich sources of vitamin E (Thomas 2006). At least 700 carotenoids—fat-soluble red and yellow pigments—are found in nature (Britton 2004). Americans consume 40–50 of these carotenoids, primarily in fruits and vegetables (Khachik 1992), and smaller amounts in poultry products, including egg yolks, and in seafoods (Boylston 2007). Six major carotenoids are found in human serum: alpha-carotene, beta-carotene, beta-cryptoxanthin, lutein, trans-lycopene, and zeaxanthin. Major carotene sources are orange-colored fruits and vegetables such as carrots, pumpkins, and mangos. Lutein and zeaxanthin are also found in dark green leafy vegetables, where any orange coloring is overshadowed by chlorophyll. Trans-Lycopene is obtained primarily from tomato and tomato products. Vitamin A, found in foods that come from animal sources, is called preformed vitamin A. Some carotenoids found in colorful fruits and vegetables are called provitamin A; they are metabolized in the body to vitamin A. Among the carotenoids, beta-carotene, a retinol dimer, has the most significant provitamin A activity. -

Carbohydrate Counting for Traditional South Asian Foods Ashwini Wagle, M.S., R.D, Doctoral Student Associate Professor and DPD Director Department of Nutrition, Food Science and Packaging San Jose State University Preface The Carbohydrate Counting tool was developed to meet the needs of the South Asian population and is an original intellectual product of the author, Ashwini Wagle, MS, RD, Associate Professor and DPD Director, Department of Nutrition, Food Science and Packaging at San Jose State University. The 4th edition and revised version was developed by the main author with assistance of Tanay Prabhu, BS Student in Biological Sciences, Drexel University, Philadelphia. The previous versions of the tool were developed with the assistance of graduate students Sajida Arsiwala, MS, RD and Bhavna Subhedar, MS and Dr. Kathryn Sucher, Sc.D, RD, Professor Emeritus, Department of Nutrition, Food Science and Packaging at San Jose State University. About the Author Ashwini Wagle, MS, RD is an Associate Professor and Director for the Didactic Program in Dietetics (DPD) in the Department of Nutrition, Food Science and Packaging at San Jose State University. Ashwini Wagle earned her MS in Food and Nutrition from Indiana University of Pennsylvania (IUP) in 93'and is currently a doctoral student in Educational Leadership (Ed.D) at University of New England. She comes to San Jose State University with over ten year experience as a registered dietitian (RD) in several skilled nursing facilities and acute care hospitals in the San Francisco Bay Area. Ashwini Wagle is also involved with several on-campus and off-campus organizations and serves on the committees for organizations such as the South Asian Heart Center at El Camino Hospital, Center for Healthy Aging in Multicultural Populations (CHAMP), Education Committee of the California Dietetic Association (CDA), San Jose Peninsula District of California Dietetic Association (SJPD), Cal-Pro Net Center.
