To promote awareness of the skills behind Japan's iconic foods, I wanted to document the work of arti- san producers of the key ingredients in miso soup without which Japan's famed cuisine would be unimaginable. Objective This research focuses on the owners of three traditional businesses in small towns in Japan's central prefecture of Toyama, a region with sea and mountains, whose fresh and preserved foods are highly regarded by Japanese chefs. Context Japan is famous around the world for its historic reverence for traditional crafts and its government's recognition of artisans, including creators of pottery, textiles and washoku, Japanese cuisine. I am fascinated by 2018 regional Japanese foods because, due to their local ingredients or pro- duction skills known only by the families who make them, they cannot be found or replicated anywhere else.

Only colonised by Japan in the past 150 years, we won’t find a land of ancient temples and shrines or developed cities with skyscrapers during our visit, but what the island lacks in regard to 21st century development, it more than makes up for in natural wonders with large swathes of wild, open spaces, primeval forests, crystal clear lakes, beautiful alpine flowers, active volcanoes and bubbling hot springs. During our circumnavigation of this remarkable island, we will visit the outlying Rebun and Rishiri Islands, explore nature trails, watch for wildlife in the national parks, learn more of the indigenous Ainu people and hopefully see the multitude of colourful flowers that should be in bloom to coincide with our visit. More than two million acres on Hokkaido are dedicated to national parkland and we will visit some of the most remarkable including the Shiretoko National Park located on the north eastern tip of the island and which in Ainu means ‘end of the world’. UNESCO has called it one of the richest integrated ecosystems in the world and in 2005 designated it as a World Heritage Site.

    Bird and Nature Trip to Hokkaido, Japan - including Rebun and Rishiri islands June 23 - July 14 2019 © Sander Broström Sofia Broström (text and landscape photos) Contact: [email protected] ​ © Sander Broström (bird and mammal photos) www.sanderbrostrom.com My son and I visited Hokkaido for three weeks in 2019, the last week of June and the first two weeks of July. This is later than recommended for birding trips, but we were very satisfied with the timing - birds were still singing intensely, more than we had ever dared to dream, while there were also lots of bird chicks and intense feeding activity going on. We were very lucky with the weather, had almost no rain at all, and limited mist. During our time in the East it was quite cold, however, especially in Nemuro. The landscape is very green and lush, crisscrossed by rivers and waterways everywhere. Impressive amounts of forest and wetland have been set away as National Parks or as “Prefectural Natural Parks”. Huge forests seem to have been never logged at all, and vast areas of marshland and meadows remain uncultivated, especially in the Eastern part, and along the coasts. We planned our trip to work our way counterclockwise around the island, ending in “the middle”, i.e., Daisetsuzan, wanting to come to Kiritappu/Nemuro as early as possible, and Rebun/Rishiri/Daisetsuzan as late as possible, due to summer arriving late in these areas. We didn’t regret this, it all worked out according to plan. It was our first visit to Japan, and we came to enjoy the landscape and of course the birds and mammals, but also Japanese culture and cuisine.
