McGowenh and Sean V. Taylor *h The safety assessment of a flavour substance examines several factors, including metabolic and physio- logical disposition data. The present article provides an overview of the metabolism and disposition of flavour substances by identifying general applicable principles of metabolism to illustrate how information on metabolic fate is taken into account in their safety evaluation. The metabolism of the majority of flavour substances involves a series both of enzymatic and non-enzymatic biotransformation that often results in products that are more hydrophilic and more readily excretable than their precursors. Flavours can undergo metabolic reactions, such as oxidation, reduction, or hydrolysis that alter a functional group relative to the parent compound. The altered functional group may serve as a reaction site for a sub- sequent metabolic transformation. Metabolic intermediates undergo conjugation with an endogenous agent such as glucuronic acid, sulphate, glutathione, amino acids, or acetate. Lloyd3 INTRODUCTION 'Metabolism' is an off-flavor described as 'earthy to bitter' which significantly reduces the economic value of maple syrup (Perkins et al. 2006). It periodically occurs in syrup simultaneously over a wide geographic range, and in some years can affect up to 25% of the total annual maple syrup crop (Perkins and van den Berg in press). Research on metabolism at the University of Vermont Proctor Maple Research Center (PMRC) had two main objectives: 1) to identify the primary compound or compounds responsi- ble for metabolism off-flavor in maple syrup, and 2) to develop a technique maple pro- ducers and packers could use to effectively remediate the flavor of metabolized maple syrup. The primary compound associated with metabolism off-flavor was identified as 2,5- dimethylpyrazine (2,5-DMP) (van den Berg et al. 2009a). 2,5-dimethylpyrazine is a nat- urally-occurring volatile flavor compound found in a variety of heat-processed foods, including roasted beef, cocoa, bacon, and coffee (Maga 1992), as well as maple syrup (Alli et al. 1992, Akochi-K. et al. 1997). In maple syrup with metabolism off-flavor, how- ever, 2,5-DMP occurs in much greater concentrations (up to 40 times greater) than in syrup without the off-flavor (van den Berg et al. 2009a). In practice, producers and packers attempt to blend out the off-flavor by mixing metabolized syrup in with good-tasting syrup.

    USE OF NATURAL COLOURS IN THE ICE CREAM INDUSTRY Dr. Juan Mario Sanz Penella Dr. Emanuele Pedrazzini Dr. José García Reverter SECNA NATURAL INGREDIENTS GROUP Definition of ice cream Ice cream is a frozen dessert, a term that includes different types of product that are consumed frozen and that includes sorbets, frozen yogurts, non-dairy frozen desserts and, of course, ice cream. In order to simplify its classification, we can consider for practical purposes two different types of frozen desserts: ice cream and sorbets. Ice cream includes all products that have a neutral pH and contain dairy ingredients. While sorbet refers to products with an acidic pH, made with water and other ingredients such as fruit, but without the use of dairy. Additionally, when referring to ice cream, we are not referring to a single type of product, we are actually referring to a wide range of these. Ice cream is a food in which the three states of matter coexist, namely: water in liquid form and as ice crystals, sugars, fats and proteins in solid form and occluded air bubbles in gaseous form, Figure 1. Artisanal ice creams based on natural ingredients which give it its special texture. It should be noted that ice cream is a very complete food from a nutritional point of view since it incorporates in its formulation a wide range of ingredients (sugars, milk, fruits, egg products ...) essential for a balanced diet. Another aspect of great relevance in the manufacture of ice cream is the hedonic factor. Ice cream is consumed mainly for the pure pleasure of tasting it, the hedonic component being the main factor that triggers its consumption, considering its formulation and design a series of strategies to evoke a full range of sensations: gustatory, olfactory, visual and even, of the touch and the ear.

    ELOISE BUTLER WILDFLOWER GARDEN AND BIRD SANCTUARY WEEKLY GARDEN HIGHLIGHTS Phenology notes for the week of October 5th – 11th It’s been a relatively warm week here in Minneapolis, with daytime highs ranging from the mid-60s the low 80s. It’s been dry too; scant a drop of rain fell over the past week. The comfortable weather was pristine for viewing the Garden’s fantastic fall foliage. Having achieved peak color, the Garden showed shades of amber, auburn, beige, blond, brick, bronze, brown, buff, burgundy, canary, carob, castor, celadon, cherry, cinnabar, claret, clay, copper, coral, cream, crimson, ecru, filemont, fuchsia, gamboge, garnet, gold, greige, khaki, lavender, lilac, lime, magenta, maroon, mauve, meline, ochre, orange, peach, periwinkle, pewter, pink, plum, primrose, puce, purple, red, rose, roseate, rouge, rubious, ruby, ruddy, rufous, russet, rust, saffron, salmon, scarlet, sepia, tangerine, taup, tawny, terra-cotta, titian, umber, violet, yellow, and xanthic, to name a few. According to the Minnesota Department of Natural Resources, the northern two thirds of the state reached peak color earlier in 2020 than it did in both 2019 and 2018, likely due to a relatively cool and dry September. Many garter snakes have been seen slithering through the Garden’s boundless leaf litter. Particularly active this time of year, snakes must carefully prepare for winter. Not only do the serpents need to locate an adequate hibernaculum to pass the winter, but they must also make sure they’ve eaten just the right amount of food. Should they eat too little, they won’t have enough energy to make it through the winter.

The experimental methods used were: (1) measurement of acid production from glucose syrups and maltodextrins by human dental plaque micro-organisms; (2) evaluation of the role salivary a-amylase in degrading oligosaccharides (degree of polymerisation .3) in the glucose polymers, estimating the products by HPLC; (3) assessment of the fermentability of trioses relative to maltose; (4) measurement of dental caries levels in three large-scale studies in laboratory rats fed on diets containing the glucose polymers. It was found that acid production from the glucose polymers increased as their higher saccharide content fell. Salivary a-amylase , subject to the Cambridge Core terms of use, available at rapidly degraded the oligosaccharides (degree of polymerisation .3), mainly to maltose and maltotriose. In the presence of oral micro-organisms, maltotriose took longer to ferment than maltose, but by the end of a 2 h period the total amount of acid produced was the same from both.

The extracts have several pharmacological effects. We evaluated the effect of curcum, curcumin, and mixture of curcumin and piperine on plasma lipids in normal and hypercholesterolemic rats. A total of 270 rats, divided into 27 groups, were used. G1, G11: control, G2-G11: normal rats fed control diet supplemented with different levels of curcumin and curcum (G2-G6: 0.1%, 0.25%, 0.5%, 1.0%, 2.0% respectively, G7-G11: 1.67%, 4.167%, 8.34%, 16.67%, and 33.34). G12-G26: at first fed control diet supplemented with 2% cholesterol then G13-17, 21-25 fed a control diet supplemented with different levels of curcumin, and curcum [the same levels as G2-G11; G18-20 fed control diet supplemented with mixture of curcumin (0.1, 0.25, 0.5%) and piperine (20 mg/kg BW)], G12 was sacrificed before addition of studied materials, G26 were fed control diet. Lipid profile, triacylglycerol and phospholipids of plasma and organs as liver and heart were measured. Serum cholesterol (total, LDL-C, VLDL-C), triacylglycerol and phospholipids contents were elevated in cholesterol-fed rats, while HDL-C were decreased.
