A whole meal in itself, this paratha recipe tastes great when served with and pickle. Made with mashed potatoes, chopped and spices, it is a simple and easy recipe that can be made in minutes. Ingredients 7 potatoes, peeled, chopped, boiled and mashed 1 handful leaves, chopped 4 tablespoon melted 1 1/2 tablespoon salt 4 green chillies, finely chopped 1/2 teaspoon powdered black pepper 1 large , finely chopped 1 tablespoon red chilli 1/2 tablespoon garam masala powder

For the 2 cup powdered wheat flour/Chappati flour 1/2 cup water

Method Boil the potatoes and mash them in a large bowl. To the potatoes, add the chopped onions, green chillies, coriander leaves, salt, garam masala powder and mix well so that no lumps remain. Knead a soft dough for the parathas with the wheat flour and water. Make small, even and round balls. Create a depression in the centre and add a spoonful of potato filling then close with even round dough ball on top of mixture. Seal the dough and round it with your fingers. Now roll them with a rolling pin into round, flat parathas. Press very lightly so that the mixture does not come out. Heat a girdle and roast the parathas, cooking them on both the sides with a spoonful of butter. Keep the frying pan or griddle on a slow heat to ensure the prantha is cooked through and browned evenly on both sides. Serve piping hot with chilled yoghurt or pickle.
