Recipe for Good Eating SUMMER GAZPACHO submitted by Patricia Huff

Gazpacho is a soup made of raw vegetables and served cold, usually with a tomato base. It is said that this cold soup originated in the southern Spanish region of Andalusia. My daughter just returned from a trip to Costa Rica and she said they had amazing gazpacho served in a variety of ways. Here is a recipe without a tomato base but very refreshing on a hot summer day.
