Antropologia Patrimoniului Gastronomic ANTROPOLOGIA PATRIMONIULUI GASTRONOMIC Prof.univ.dr. Carmen Costea A 5.2a_12_2014 1 Argument autohton în favoarea acestui curs Antropologia culturală modernă îşi are originile în sec. al XIX-lea în conceptul de "etnologie" care presupune compararea organizată a societăţilor umane. Etnologii au avut un interes deosebit în cercetarea mediului în care trăiesc oamenii în diferite părţi ale lumii şi a modului în care ei recunosc, acceptă, folosesc conceptele legate de credinţă, tradiţie şi practici şi obiceiuri similare. Există voci care susţin că asemănările de civilizaţie înseamnă că diferite grupuri au trecut prin aceleaşi etape ale evoluţiei culturale. Aceste cercetări de natură antropologică continuă să preocupe, în maniere felurite, oamenii din diferite localizări, legându-i de experienţa şi cunoaşterea generală, de înţelesurile complexe ale vieţii. Metodele antropologie aplicate diferă de la sociologi la economişti, de la psihologi, la politologi. Economiştii se uită mai degrabă la măsuri globale, cum ar fi produs naţional brut şi venitul pe cap de locuitor, precum şi la modul de distribuire a veniturilor şi inegalitatea într-o societate. Antropologia oferă un altfel de analiză, de o granulaţie fină a informaţiilor calitative din spatele unor cifre seci, cum ar fi natura grupurilor sociale implicate şi semnificaţia socială a compoziţiei de venituri. Într-o asemenea abordare intră şi demersul de a cerceta alimentul şi nutriţia ca patrimoniu cultural, dincolo de cunoaşterea etnologică sau de folclor. Acesta este motivul pentru care cursul actual îşi propune să ofere o mai bună înţelegere a acestor concepte legate de om, obiceiurile locale, instituţiile patrimoniale cu rol în susţinerea valorilor, dar şi a ideii de afaceri şi de comportament în dezvoltarea complexă a pieţei şi firmelor în interiorul reţelelor complexe care contribuie la dezvoltarea sustenabilă Demersul actual are în vedere câteva puncte-cheie, care reprezintă, de altfel, componentele de bază ale lucrării. De la bun început sunt expuse premisele, mobilurile şi direcţiile de dezvoltare ale 2 lucrării. Stadiul actual al preocupărilor aferent fiecărei secţiuni se bazează pe analize şi sinteze concludente, ancorate în adevăruri istorice. În esenţă, este binecunoscut faptul că popoarele romanice apar în plan european în a doua jumătate a mileniului I. Cu toate valurile de popoare migratoare care au trecut peste teritoriile geto- dacice, romanii au avut cea mai puternică influenţă. Asimilarea culturii şi civilizaţiei lor a fost un proces mai mult sau mai puţin conştient, mai mult sau mai puţin asumat. Cert este faptul că locuitorii acestui spaţiu se vor numi români, formând o insulă de latinitate înconjurată de popoare de alte origini: germani, slavi, maghiari. Apariţia pe harta Europei a Transilvaniei, Ţării Româneşti şi a Moldovei a fost rezultatul unui proces lung, anevoios şi sinuos, dominat de interese politice, comerciale sau religioase. Rezistenţa faţă de Regatul Ungar şi de Imperiul Otoman a determinat consolidarea statelor româneşti în secolele al XIV-lea şi al XV-lea şi afirmarea lor în plan economic şi social-politic. Ca urmare, s-au dezvoltat meşteşugurile, producţia de mărfuri şi sa intensificat circulaţia monetară. În acelaşi timp a sporit circulaţia populaţiei dintr-o ţară în alta, ca rezultat al exploatării resurselor naturale şi refacerii economice, după încetarea războaielor cu turcii. Odată cu ele s-a dezvoltat simţul imitaţiei unei vieţi mai bune, al preluării unor obiceiuri moderne de la populaţiile din regiunile mai dezvoltate. Modernizarea statului a fost un proces îndelungat şi anevoios, creator de instituţii esenţiale. Remarcabilă este pentru secolul al XVII-lea activitatea culturală şi caracterul ei general românesc, cristalizându-se caracteristicile umanismului. Spiritul creator se evidenţiază în literatură - mai ales cea filosofică, juridică, istorică, etc. - în arhitectură, artă; se conturează o prolifică relaţie a tradiţiei cu inovaţia. Iluminismul românesc, avându-şi originile în operele cronicarilor, se dezvoltă cu repeziciune, generând conturarea intelectualului român, care are ca obiectiv includerea poporului său în civilizaţia europeană. 3 Remarcabile sunt lucrările lui Gheorghe Şincai, Budai-Deleanu, Petru Maior, ce confirmă, pentru secolul al XIX-lea, denumirea de secolul luminilor. De altfel, secolul al XIX-lea se remarcă şi prin progresele în plan economic şi social; se dezvoltă puternic industria în baza cuceririlor tehnologice, se măreşte reţeaua de transport, agricultura prosperă, oraşele se extind, comerţul înfloreşte - mai ales spre Franţa şi Anglia, reformele politice susţin drepturile civile. În anul 1864 este promulgat un nou cod civil care garantează egalitatea cetăţenilor şi proprietatea acestora. Este important să menţionăm aici şi legea învăţământului care reglementa instruirea la toate nivelurile; învăţământul primar devine obligatoriu şi gratuit. Constituţia din 1866 a fost întemeiată pe experienţa ţărilor occidentale şi susţine rolul legislativului în sistemul parlamentar. Aşadar, în anul 1918 sunt îndeplinite condiţiile pentru crearea României Mari – fapt care s-a şi întâmpla. Perioada interbelică, în ciuda numeroaselor dispute din plan politic, cunoaşte o prosperitate şi o vitalitate remarcabilă. Agricultura rămâne baza economiei şi furnizează exportului cantităţi semnificative de bunuri. Împreună cu industria, agricultura se ambiţionează să satisfacă nevoile consumatorilor, chiar şi în perioada marii crize economice. Obiceiurile încep să se schimbe, se modernizează, plăcerile se metamorfozează, dorinţele şi visele devin realitate în viaţă de zi cu zi. Cel de-al Doilea Război Mondial şi dictatura comunistă căreia România trebuie să i se supună, zdruncină din temelii echilibrul destul de fragil al întregii vieţi socio-economice. Crearea statului totalitar odată cu înfiinţarea Republicii transformă România după modele sovietice: are loc naţionalizarea întreprinderilor industriale, a băncilor, minelor, societăţilor de asigurări şi transport; are loc colectivizarea forţată a ţăranilor, sunt distruse partidele de opoziţie. Învăţământul şi religia devin obstacole majore şi intelectualii eminenţi sunt înlăturaţi sau sunt supuşi 4 unor pedepse fără raţiune. România devine prizoniera izolării, a măsurilor unui complex de acţiuni orientate spre distrugere morală, dar şi materială. Revoluţia din anul 1989 deschide calea spre reforme politice şi economice, deseori ezitante şi în dezacord cu realităţile din România. Ea aduce din nou speranţa tuturor de a trăi într-o ţară civilizată, cu adevărat europeană. Merită a menţiona, drept catalizatori ai transformărilor, intrarea în Uniunea Europeană, sprijinul NATO şi nu în ultimul rând, Casa Regală a României. Astăzi, universul nostru socio-economic se caracterizează prin profunde mutaţii induse de oportunităţile pieţei, de conjuncturile politice, de versatilitatea factorilor financiari. El se dezvoltă sub sigla modificărilor configuraţiei concurenţei mondiale (datorată evoluţiei gusturilor consumatorilor şi a posibilităţilor lor financiare, a transferurilor demografice şi de putere economică, a substituirilor tehnologice, cerinţelor legate de fenomenul ecologic s.a.). Evoluţia gândirii şi culturii economice, dezvoltarea spiritualităţii lumii moderne, a valorilor morale ale tinerelor generaţii care aspiră la îîmbunătăţirea calităţii vieţii sunt, de asemenea, factori demni de luat în seamă. Mutaţiile din planul socio-economic sunt surprinse într-o abordare sistematică a problemelor, iar reunirea lor într-o manieră integratoare şi originală a cercetărilor teoretice cu interesele practice, sunt clar orientate spre satisfacerea consumatorului. În acest context, efectele schimbărilor frecvente ce au loc în mediul economic, politic şi social, competiţia puternică, preferinţele crescânde şi mereu schimbătoare ale consumatorilor sunt realităţi ce se răsfrâng asupra imaginii de ansamblu a oricărei ţări, în cazul de faţă asupra României. Modus vivendi devine un brand, idealurile occidentale transformă zilnic acest brand purtându-l într-un carusel din care valoarea naţională iese şi reintră neîncetat. În condiţiile economiei de piaţă, consumatorul devine axul central al tuturor activităţilor economice ce converg către satisfacerea cât mai deplină a dorinţelor, exigenţelor, preferinţelor şi necesităţilor sale. Satisfacerea lor devine însăşi esenţa acţiunilor economice realizate. De aceea, calitatea devine insistent reclamată de societatea contemporană şi conectată atât la mediu dar şi la patrimoniul 5 valorilor trecutului, ca singurul liant de menţinere a perenităţii umane şi expresie adevărată a victoriilor fiinţei umane asupra sinelui. Cu timpul, lucrarea se va constitui într-un studiu mai amplu, valoros prin conţinut, informaţii şi contribuţii originale importante, într-un context cultural-educativ, sub forma unui viitor curs de Antropologia Patrimoniului Gastronomic care va fi predat, în cadrul Programului de Master interdisciplinar Valorizarea Patrimoniului de la Facultatea de Marketing şi Relaţii Economice Internaţionale din Universitatea Spiru Haret. 6 Descrierea cursului Scopul principal al cursului de Antropologia Patrimoniului Gastronomic este de a facilita înţelegerea relaţiei dintre câteva concepte educaţionale, diferite unul de celălalt: patrimoniu, antropologie şi gastronomie. Prin scoaterea la lumină a unor valori aparte, conceptele se leagă între ele, printr-o nouă abordare, prin prisma comportamentului raportat la hrană şi nutriţie. Cursul va încerca să ofere explicaţii

    Norman William Usher Norman Usher passed away in his Manhattan home on May 6, 2015. Born in Omaha, Nebraska under the last name Osheroff, he graduated from Omaha Central High School. His Princeton major was Economics and he was a member of Key and Seal Club. He played trumpet in the Tigertown five and the Triangle. After graduation, he spent two years in the U.S. Army and was stationed in Korea. He continued to play the trumpet while in the service. Norman completed an M.B.A. degree at the NYC Graduate Business School of Scientific Management. He worked in the Data Processing division of IBM in Philadelphia. He married Deanna Sorenson in 1962 but was divorced at the time of his death. James Crawford James Crawford died on August 13,2015 of natural causes, Born in the Philippines, he spent most of World War II interned with his family at the Santo Thomas University, Manila. He graduated from the Thatcher School, Ojai, CA. His college major was English and he was a member of Tower Club. After graduation, he received his master’s degree and Ph.D. at the University of California, Berkeley in History, and he attended to Naval Post Graduate School to study Russian. The Navy utilized him in the Intelligence Service. Jay was a devoted father and grandfather. He had a wealth of knowledge and was an avid sports fan. During his career he worked as a journalist and interviewed Ronald Reagan and Walt Disney. He is survived by his wife Carolyn, his daughter Audrey, Stepchildren Lynne, Dawne, Chris and Jim and four granddaughters.

    David M. Reed Dave died on February 8, 2021, in Bryn Mawr, Pa. He was 89. He was raised in Pittsburgh and came to Princeton from Shadyside Academy. At Princeton he was a member of the varsity soccer and wrestling teams, joined Cap & Gown and was in the cast of the Triangle Club in the years when the troupe made annual appearances on the Ed Sullivan Show. He majored in English and his thesis “Mark Twain and God” prefigured an interest in the ministry. Dave received a Master of Divinity from Princeton Theological Seminary in 1958 and became a Presbyterian minister, working with several congregations in Philadelphia. Driven by a desire to provide a more personal level of counselling, he earned a Doctorate in Psychology from Tulane University in 1965. He subsequently joined the Marriage Council of Philadelphia. He had a distinguished fifty-year career as a psychologist in the Philadelphia area, continuing to see patients into his early 80s. In addition, he was a radio talk show host on WCAU 1210 radio for several years beginning in the late 1970s, providing advice to callers anxious for access to a caring voice. Dave was married for 37 years to Carolyn Chapple before her death in 1993, and 23 years to Kathy Keogh before she too passed away in 2018. He is survived by his children David Jr. ’79, Douglas and Jennifer; stepchildren Sara and James; six grandchildren and a step-grandchild. John Atwater Bradley – Memorial Note Brad died on February 23, 2021. At Brooklyn Technical High School (NY) he was active in student government, glee club, and swimming.

He moved to Los Angeles to complete his Ph.D. at the University of Southern California in 1976. His later career involved testing in industrial psychology. Ken married several times but lived alone for the past 25 years. He enjoyed line dancing three times a week and actively pursued his interests in science, math and industry. At the time of his death he had retired to Sarasota Fl. The class sends condolences to his two children Bailey and Arthur. James Mitchell Voorhees Jim Voorhees died peacefully in his sleep May 17, 2015. Born in Plainfield, NJ, he graduated from Plainfield High School. He was proud to become a third generation Princetonian. Jim majored in Psychology, minored in Music and was a member of Charter Club and the Jazz Club. He and his roommate, Dick Lethen, collaborated on several musical scores. Jim wrote the music and Dick, the lyrics. Jim was drafted into the Army after graduating from Princeton. Upon completing training at Ft. Douglas in Salt Lake City, he was transported to Ft. Lewis, Washington, where he boarded a troop ship destined for Korea.
