Essex Manchego, Aged Six Months ESSEX MANCHEGO, AGED SIX MONTHS Made at Sierra de la Solana Farm, in the province of Ciudad Real in La Mancha, Spain. Queso Manchego Artesano, Denominacion de Origen (PDO) VISUAL CHARACTERISTICS Hard, ridged, unwaxed natural rind; Cylindrical shape with straight edges and flat top and bottom; 3 to 4 inches high, 8 inches in diameter; weighs an average of 6 to 7 pounds. CATEGORY OF CHEESE Hard, uncooked, pressed, raw sheep’s milk cheese. SCALE OF PRODUCTION Farmstead, approximately 500 milking ewes. MILK TYPE Raw sheep’s milk, from the La Mancha (Manchega) breed. CHEESEMAKING DETAILS/ The milk is heated at 82-89ºF for 30 to 60 minutes and kept at this temperature for 45-60 PROCEDURE minutes. The resulting curds are cut into the size of rice grains. The mixture is then stirred and heated again to 104ºF to help drain off the whey. The curds are placed in cylindrical molds, which imprint the standard ‘flower’ pattern on the top and bottom of the cheese and the typical weave marks on the sides. Then they are pressed and salted. AFFINAGE/ The cheeses are matured for 6 months. Affineur Jose Luis Martin selects batches that feature CHEESE MATURING NOTES balanced flavors without the harshness that often afflicts Manchego. TEXTURE Toothsome, slightly granular. APPEARANCE A mottled grey-brown natural rind protects an ivory colored paste that has a few small holes and some visual fine texturing. SMELL/AROMA Hints of Jamon Serrano. Sweet, milky, sheepy notes. FLAVOR Full-bodied rustic sheepy notes fill the palate at first, then give way to a sweet, milky finish with hints brown spice such as nutmeg and cassia bark. WINE SUGGESTIONS A wine with some tannin, like Rioja or Ribera Duero. Also pairs well with a bone dry fino sherry. It’s typical to eat Manchego with fresh grapes—red or white..

Briceño Department of Transportation, Castilla-La Mancha University, Spain Abstract Ciudad Real is a medium size Spanish town of 70,000 people located 190 kilometres South of Madrid and enjoys collective public transportation and a high-speed rail link with Madrid. This paper presents and analyses the results of the first study on mobility and public transportation’s acceptability carried out in this town. Consequently, the methodology proposed is based on a household survey campaign (more than 995 valid questionnaires), main streets counting, a survey campaign at the main entrances and exits of town (1050 surveyed cars at the rush hour) as well as a sampling of travel time and occupancy of bus lines. Along with an analysis of city mobility, a detailed study is presented in which the relationship between the city’s interurban mobility with Madrid by high-speed train line is depicted. Keywords: urban mobility, transportation planning, public transport. 1 Introduction In Spain, according to the census conducted in 2001, 24% of the population lives in towns with less than 10,000 inhabitants, 26% in towns whose population ranges from 10,000 to 50,000 inhabitants and another 26% who lives in towns whose populations range from 50,000 to 250,000 inhabitants. In short, more than 75% of Spaniards live in small or medium size towns. These percentages vary between different countries but most of the population is concentrated in medium size towns.

Los materiales recuperados ponen de manifiesto la existencia de un extenso vicus de aproximadamente 24 hectáreas fundado en la se- gunda mitad del siglo III d.C. Este asentamiento ha tenido un largo recorrido histórico desde entonces hasta hoy. En ese lugar se han des- arrollado las poblaciones de Aberturas (denominación medieval y moderna), Consolación (denominación moderna y contemporánea) y Villanueva de Franco (denominación contemporánea). Además de viviendas y materiales arqueológicos cerámicos romanos, medievales -tanto islámicos como cristianos- y modernos, la inter- vención arqueológica ha permitido documentar silos, varios de los cuales fueron hallados vacíos y cerrados. También se han encontrado un pozo antiguo que explotaba el Acuífero 23, piletas, un lagar y el locus de otro.

Its starting point is the Atlas Lingüístico de la Península Ibérica (ALPI) maps, and the paper published on them by Tomás Navarro Tomás, comparing them to those from the Atlas Lingüístico y etnográfico de Castilla-La Mancha (ALeCMan) and from the Atlas Dialectal de Madrid (ADiM). Our results allow us to confirm the unstoppable progress of the /ʎ/-/ʝ/ merger and the geographical direction of the change.
