This is an untried recipe but I found it (handwritten) inside one of our cookbooks.

6 Tbsp butter (softened) 1 cup sugar 1 cup molasses 1 egg 2 Tbsp white vinegar 4 cups all purpose flour 2 tsp ground ginger 1 1/4 tsp baking soda 1 tsp ground cinnamon 1/2 tsp ground cloves 1/4 tsp salt 5 cups confectioner’s sugar 5-6 Tbsp fat free milk

In a mixing bowl, beat butter & sugar until crumbly, about 2 min. Beat in the molasses, egg, vinegar. Combine the flour, ginger, baking soda, cinnamon, cloves & salt. Gradually add to the creamed mix- ture. Cover and refrigerate for 4 hours or until easy to handle (dough will be sticky).

On a lightly floured surface, roll out dough to 1/8 inch thickness. Cut with 4 inch cookie cutters dipped in flour. Using a floured spatula, place cookies 1 inch apart on baking sheets coated with cooking spray.

Bake at 375 degrees for about 5 to 6 minutes or until set. Remove to wire rack.

The Board usually meets at 9:30 on the second Wednesday of each month (see Page 2 for actual dates). All seniors and interested parties are welcome to attend. Only emergency meetings are held during the summer.

The July Birthday BBQ will be held on Wednesday, July 25th at noon and the August Birthday BBQ will be held on Wednesday, August 29th at noon. Please call the COA by Monday, the week of the BBQ to sign up for the birthday lunch. The lunch is free to our Boxford seniors who will be celebrating their birthday that month, compliments of The Friends of the Boxford COA.
