Beer Of The Month! Pacifico Clara First brewed in the port town of Mazatlan at the turn of the 20th century by European settlers, Pacifico is a Mexican Pilsner style 'sunshine' beer. It is becoming an increasingly popular beer, with an almost cult following in the US following its appearance in the southern states in the 1980s. In the UK, Pacifico is now a staple in a growing number of independent, specialist bars in several cities. Pale straw and brushed gold in appearance, Pacifico is a classic Mexican lager with a solid palette of flavors and aromas. The nose is slightly creamy, the result of a collision of hoppy spices which sits on a subtle carpet of sweet malt, combining to create an appealing balanced aroma. First impressions are of an almost sharp, crisp refreshment which is enhanced by a gentle carbonation, all culminating in a zesty mouthfeel reminiscent of lemon sorbet and sherbet. This is undercut by a continuation of spicy hops and citrus from the nose, which cling to the back of your mouth and throat. The flavors are absorbed in a lingering finish which maintains character all the way to its eventual and slow dissipation into the tongue. Tastes as good towards the end as it did at the start and for me, this is a surprisingly rare quality in beer. Pacifico Clara is best served ice cold and will combine well with Mexican food, in particular seafood and warm summer sunshine!
