Originally a bycatch of lobster and crab traps, this tasty reef fish is also caught by spearfisherman in warmer waters. Placing a value on bycatch allows fishermen to make money on lesser species that wander into traps, while helps to minimize bycatch altogether. Don’t let the name fool you: The white flesh is juicy and buttery. This one was found at Keegan’s in Hyde Park.
