    World Famous Hot Brown Sandwich MORNAY SAUCE 2 ounces whole butter 2 ounces all‐purpose flour 8 ounces heavy cream 8 ounces whole milk 1/2 cup Pecorino Romano cheese plus 1 tablespoon for garnish Pinch ground nutmeg Salt and freshly ground black pepper to taste 4 slices Texas Toast, crust trimmed 14 ounces sliced roasted turkey breast, sliced thick 2 Roma tomatoes, sliced in half 4 slices crispy bacon Paprika, for garnish Parsley, for garnish Preparation Preheat oven to 350 degrees. For the Mornay sauce, in a two-quart saucepan, melt butter and slowly whisk in flour until combined and forms a thick paste (roux). Continue to cook roux for two minutes over medium-low heat, stirring frequently. Whisk heavy cream and whole milk into the roux and cook over medium heat for about 2‐3 minutes, or until the cream begins to simmer. Remove sauce from heat and slowly whisk in Pecorino Romano cheese until the sauce is smooth. Add nutmeg, salt and pepper to taste. For each Hot Brown sandwich, place two slices of toast with the crusts cut off in an oven safe dish – one slice is cut in half corner to corner to make two triangles and the other slice is left in a square shape ‐ then cover with 7 ounces of turkey. Take the two halves of Roma tomato and two toast points and set them alongside the base of the turkey and toast. Next, pour one half of the Mornay sauce to completely cover the dish. Sprinkle with additional Pecorino Romano cheese. Place the entire dish in the oven and bake for 20 minutes.

Today, it draws over 150,000 people to the city of Louisville for one of the biggest, greatest, and most historic sporting events in America. Due to the size of the event, if you are hoping to attend the Derby pre-ISP, you’ll need to start planning sooner rather than later. We’ve put together this guide to help you out. WHAT IS KENTUCKY OAKS? The day before the Kentucky Derby is Kentucky Oaks, the top race in the US for three-year-old female horses. The Kentucky Oaks race is just as historic as the Derby, having also been established in 1875. Spectators are encouraged to wear pink at the Oaks in support of breast cancer and other women’s health issues. WHAT IS THE KENTUCKY DERBY? The Kentucky Derby is one of the longest running sporting events in America. This one and one-quarter mile long race for three-year-old Thoroughbred horses is often called the “Most Exciting Two Minutes in Sports.” The day features 14 races, with the Kentucky Derby being the 12th race. Throughout the day, spectators wager on different horses while sipping mint juleps and sporting their biggest hats and best preppy, pastel Derby attire.     The Kentucky Derby Museum Churchill Downs, Louisville, Kentucky Role: Architect for New Museum Building Area: 45,000 sf Description: In 1982, our firm was selected through a national competition to design a new building for the Kentucky Derby Museum. Located at world- renowned Churchill Downs, the new building has been sited to create an entry courtyard that will impart a sense of arrival that is appropriate to this famous institution. This entry court is flanked on the east by the museum building, on the west by the historic Club House and on the south by the entry portico to Churchill Downs. In order to unify the architectural expression of these two buildings, the front façade of the new Museum is designed as a mirror image of the front of the Club House, with the entry doors of both buildings on an axis with each other. The Museum’s twin spires and slopping roof echo the architecture of the race track structure, which further unifies the Churchill Downs complex. Inside the 45,000 sf three-level building, there are approximately 18,000 sf of public areas, including 12,500 sf of long term and temporary exhibition galleries on two levels, a gift shop, dining facilities, and an auditorium. Outdoor areas south of the museum building will be used for live demonstrations of tracking and saddling, outdoor dining, and additional exhibits. The primary goal of the exhibition program is to tell visitors about horse racing in general and the Kentucky Derby in particular so that they will find their experience at Churchill Downs more interesting and enjoyable.
