As heat travels through, it transforms batters and doughs into baked goods with a firm dry crust and a softer center. Baking can be combined with grilling to produce a hybrid barbecue variant by using both methods simultaneously, or one after the other. Baking is related to barbecuing because the concept of the masonry oven is similar to that of a smoke pit. Cooking 101 – Barbecue Barbecuing techniques include smoking, roasting or baking, braising and grilling. The original technique is cooking using smoke at low temperatures and long cooking times (several hours). Baking uses an oven to convection cook with moderate temperatures for an average cooking time of about an hour. Braising combines direct, dry heat charbroiling on a ribbed surface with a broth-filled pot for moist heat. Grilling is done over direct, dry heat, usually over a hot fire for a few minutes.     Recipe title: Broccolini Scallops Recipe source or inspiration: The Nutrient Dense Kitchen by Mickey Trescott Recipe: For the vegetables 2 tbsp solid cooking fat, divided 2 large shallots, thinly sliced 1 bunch broccolini, stems and florets chopped (about 3 cups) 1 cup chopped mushrooms 2 cloves garlic, minced 1 tsp minced fresh ginger (or 1/2 tsp ground ginger) 1/2 tsp sea salt 1/2 cup basil, chopped 1 1/2 tbsp fresh lemon juice For the scallops 1 tsp solid cooking fat 1/2 pound sea scallops (about 8 large) 1/4 tsp sea salt drizzle of olive oil Directions 1. Heat 1 tbsp of solid cooking fat in the bottom of a non-stick skillet on medium heat. When the fat has melted and the pan is hot, add the shallots, and cook for 2 minutes. Add the broccolini and cook for 5 minutes, until some edges are beginning to get crispy. 2. Add the rest of the cooking fat to the pan along with the mushrooms, garlic, ginger, and salt to the pan and cook, stirring, for another 2 minutes. 3. Take off the heat and stir in the basil and lemon juice. Remove from the pan and set aside while you make the scallops. 4. To make the scallops, heat the cooking fat in the same skillet you used for the vegetables on medium heat. Pat the scallops dry with a paper towel and sprinkle them with the sea salt. When the fat has melted and the pan is hot, add the scallops to the pan and cook for 60 to 90 seconds per side, flipping once, until browned on the outside and opaque.
