Organoleptic test, and protein, calcium and fibre content measurements were therefore conducted to evaluate the resulting milkfish meatballs Moringa oleifera, with and without the addition of kelor leaves. Results obtained showed that the addition of Kelor, kelor leaves increased calcium but decreased the protein content of milkfish meatballs. Boiled Meatballs, treatment reduced the protein content of milkfish meatballs but increased the fibre content. For Milkfish, Nutrition. all the organoleptic characteristics tested, original milkfish meatballs were more acceptable than samples with the addition of kelor leaves. Among the addition treatments for boiled and unboiled leaves, milkfish meatballs added with 10% boiled kelor leaves were the most accepted by panellists with colour, aroma, taste, texture, and overall acceptance scores of 2.65, 3.20, 2.88, 2.87 and 2.85, respectively.

    IKEA Food Services AB Malmö, June 4, 2019 IKEA to make tasty food more sustainable with no-meat protein meatball IKEA develops a new plant-based protein version of the iconic Swedish meatball, with the ambition to make it just as (or even more) famous as the meaty one. A first prototype will be offered to visitors at Democratic Design Days in June. Until 2050 it’s estimated that the protein consumption in the world will double due to a fast-growing population. The global demand for food will increase by 70 per cent, and the protein production of today cannot meet this demand. This leads to a high demand for alternatives to meat and seafood, and IKEA wants to do its shared part to offer healthier, tasty and more sustainable food choices. The plant-based meatball is one step on this longer journey. “At IKEA, we are constantly exploring new opportunities in creating a more sustainable future. We want to move towards more plant-based, and low impact foods served to our guests. Lower impact and plant-based ingredients are more sustainable than for instance red meat and pork”, says Michael La Cour, Managing Director at IKEA Food Services AB. The new meatball is made by plant-based alternative proteins, and the ingredients include amongst others pea protein and pea starch, potato flakes, oats and apple. The ambition is that it should be just as tasty as the meat variant, typically served with mashed potatoes, lingonberries and cream sauce. Several tests have been carried out and prototypes have been made in close collaboration with suppliers and chefs.

The little bursts of fruit, warming spices and lamb mince taste like food you would find at the crossroads of Europe: Israel, the Lebanon, Jordon, Syria, Egypt and Saudi Arabia. For an accompaniment, simply toast pitta bread to serve. This makes it a very quick and nutritious midweek meal for the whole family. You can serve with rice too. It’s high in HBV protein from the lamb and LBV protein from the chickpeas. The herbs and pomegranate seeds add vitamin C. Very suitable for teenagers who have anaemia, who are training and it is a suitable recipe for the beginner cook. Preparation time – 10 – 20 minutes dependiing on the cook Cooking time 25 - 30 minutes. Serves 4 Serve with toasted pitta bread and a side salad if you have the time. Ingredients 1 tbsp oil 450g minced lamb or 12 shop bought lamb meatballs 1 onion, finely chopped 2 large garlic cloves, crushed 2 tsps cumin 1 tsp coriander ½ tsp cinnamon 1 chilli, finely diced 1 tsp harissa or ½ tsp chilli powder or a ½ chopped red chilli. 1/3 or ½ stock cube made with 200-300mls water 1 can chopped tomatoes 2 cans chickpeas, drained Small bunch of fresh mint, chopped roughly Small bunch fresh parsley, chopped roughly Seeds from 1 pomengranate Key Equipment: Measuring spoons Red chopping board for making meatballs Wooden spoon Can opener Sharp knife Large saucepan or casserole dish Measuring jug 2 small bowls 2 plates 1 pair of disposable plastic gloves or a set of very clean hands.
