Since the last publication of the inventory list for dragonflies and damselflies within the boundary of Andalas University’s Limau Manis Campus Complex, Padang, in 2018, the study has been continuously conducted. In this study we add five new species of Odonata for Andalas University’s Limau Manis Campus Complex, with one species Drepanosticta cf. bispina requires further investigation and elaboration on its existence in West Sumatra. We also corrected the identification of Heliocypha fenestrata into H. angusta angusta. With this addition, Andalas University’s Limau Manis Campus Complex currently resides for 32 species and 9 families of Odonata, increasing from previously 27 species and 8 families. USE OF NATURAL COLOURS IN THE ICE CREAM INDUSTRY Dr. Juan Mario Sanz Penella Dr. Emanuele Pedrazzini Dr. José García Reverter SECNA NATURAL INGREDIENTS GROUP Definition of ice cream Ice cream is a frozen dessert, a term that includes different types of product that are consumed frozen and that includes sorbets, frozen yogurts, non-dairy frozen desserts and, of course, ice cream. In order to simplify its classification, we can consider for practical purposes two different types of frozen desserts: ice cream and sorbets. Ice cream includes all products that have a neutral pH and contain dairy ingredients. While sorbet refers to products with an acidic pH, made with water and other ingredients such as fruit, but without the use of dairy. Additionally, when referring to ice cream, we are not referring to a single type of product, we are actually referring to a wide range of these. Ice cream is a food in which the three states of matter coexist, namely: water in liquid form and as ice crystals, sugars, fats and proteins in solid form and occluded air bubbles in gaseous form, Figure 1. Artisanal ice creams based on natural ingredients which give it its special texture. It should be noted that ice cream is a very complete food from a nutritional point of view since it incorporates in its formulation a wide range of ingredients (sugars, milk, fruits, egg products ...) essential for a balanced diet. Another aspect of great relevance in the manufacture of ice cream is the hedonic factor. Ice cream is consumed mainly for the pure pleasure of tasting it, the hedonic component being the main factor that triggers its consumption, considering its formulation and design a series of strategies to evoke a full range of sensations: gustatory, olfactory, visual and even, of the touch and the ear. -

35 Developing the Exploitation of Trochu3 niloticus Stock onithe_Ta'hiti Reefs Readers of our Newsletter have already been informed that the stock of trochus (Trochug niloticus) which has developed on the reefs of Tahiti, from a few dozen specimens introduced in 1957 from Hew Caledonia has started to be methodically harvested (see SPIPDA Newsletter ITo. 3-4, March 1972, p. 32). Begun in the southern part of the island (Tahiti Iti peninsula, districts of Tautira and Pueu), the harvesting, strictly supervised, was gradually extended to the whole of the island and over four diving periods fjrom November 1971 to June 1973? more than 350 metric tons of shells were marketed (from over 450 tons of live specimens, for a value of about 5 million Frs CTP (equivalent to about US$ 70,000).
