16 august 2-8, 2007 | entertaining u newspaper LAYERED HUMMUS

A dark wood, full bar serves the need of Zaitoon’s patrons. The wine list is more than adequate, with wines not just from the Mediterranean, but from around the world. The wine by-the-glass menu is broken down by taste rather than by just reds and whites. Later on, in the by-the-bottle section, it’s also grouped by country. Listed from lighter fl avored wines to more full fl avored wines within each country. This way you can try a wine that fi ts your palate with the minimum amount of fuss. They also have wine fl ights, a selection of three, 2-ounce tastes of different wines. There’s a decent list of after-dinner coffee liqueur drinks and a martini list. The appetizers, called “tapas” in the Spanish tradition, are divided into items that are served cold or hot. On the warmed or hot side, you’ll fi nd spanakopita, a Greek dish of butter brushed phyllo pastries baked and fi lled with spinach, sweet onion and feta. There’s also fl ash fried calamari and the ever-popular Middle Eastern favorite of kibbie. Under the cold tapas there are a number of spreads for breads, including a signature dipping sauce. In this section I’d have to recommend the layered hummus here over their plain hummus. Fresh tomato, cucumber, red onion, kalamata olive, spinach and feta cheese top this layered hummus dish. Like most good Mediterranean restaurants, Zaitoons includes a lentil soup on the menu. The soup selection is sparse as it is most places, with just a few selections, but the salad section makes up for it with a number of varied choices. I sampled the Roasted Beet & Curried Walnut, served up generously with feta on a bed of mixed spring greens. Salads served here come in side portions or full portions and side portions come with all kebab entrées. Skewerless kebabs form the bulk of the lunch menu, including tasty lamb, beef and savory chicken. The best choice is a combo kebab of two different kinds of meat. At dinner try Zaitoon’s Spanish Paella, with local shrimp, mussels, clams, calamari, and chicken sautéed in a white wine then baked over a chorizo and oven dried tomato risotto. You might want to sample their classically Greek Moussaka, a napoleon of eggplant, potato, ground sirloin, lamb and tomato with a Bechamel, or white sauce. Chicken lovers will fi nd it hard to resist the description of their Sicilian Chicken, grilled and served with dried chilies, potato, bell peppers, tomato, olives, capers, and red wine amid basmati rice. Under desserts you might want to give the kataifi a try. This Middle Eastern treat is also very common in Greece. It’s made from a light, shredded dough topped with honey or a sweet syrup. There’s also the classic baklava. I sampled a raspberry and baklava that was just plain delish. So if you’re looking for a new place to go, give Zaitoon a try. They’ve got a great bar, a patio for smokers and excellent kebabs.

eujacksonville.com | august 2-8, 2007 17 If you were to go back to school, what would you go for? Some college graduates wish to return to school to get a formal education in their fi eld to replace that History degree they will never use. Others have never had the opportunity to go to college, but want to get a career going so that they can escape their low-paying jobs. That is why many go to trade schools such as Florida Technical College to learn a specialized craft at a fast pace and become a valuable asset to a particular industry while increasing their own net worth. More often than not, college graduates get paid better, promoted faster, and have more leverage when looking for work.

fruit juice college Florida Community College at Jacksonville needs to change the preposition in its name. Shouldn’t it be Florida Community College in Jacksonville? They’re the institution of higher learning, what do I know? Once known as Florida Junior College, FCCJ used to be called FJC, thus earning it the moniker Fruit Juice College. At the time it was seen as an insult, but fruit juice is actually quite good for you, and FCCJ doesn’t play nice with any easy acronym. (Finally Caught Car Jacking?) But FCCJ is defi nitely the place to start when you are looking for the quickest path to a degree. Although it is of course true that you could start at a four-year university such as the University of North Florida, these formal institutions aren’t always as able to work around a busy person’s schedule, and the professors are not always as sensitive to the fact that you have a full time life outside of full time school. If you intend to go to a four year university from the start, be prepared to make a full time commitment to that institution. However, if your education you get an AA from FCCJ, most area colleges, private and public, will accept you as a junior. Although the name may seem tricky, this degree has nothing to do with art. “Liberal Arts” is a standard term for the meat of your education. Everybody has to eat, so anything that can be done to elevate eating to a pleasurable experience should be regarded as high art. A culinary school degree will certainly sharpen your skills, particularly in specialty areas such as pastries, but you will often have to work your way up from the bottom in much the same way someone who doesn’t have a degree would. The advantage of earning a degree comes from the experience you gain and the abilities you master, giving you an advantage over less invested job candidates. Here’s a list of some culinary schools close to Jacksonville, as well as two other notable schools here in the South. FCCJ They’ve turned out some of the best chefs in the First Coast area.
