Wine & Cheese by TCC's June 2019 Wine Club Wine & Cheese by TCC’s June 2019 Wine Club This month we’ve selected wines from two different regions in Italy. The first selection is a Grillo from Feudo Principi di Butera located in the southeastern part of Caltanissetta, about two hours from Palermo. The hot, dry climate of Sicily is perfect for growing Grillo which has the quintessential characteristics of a white Italian table wine: light and easy drinking. The second selection is the Chianti Classico DOCG from Castello di Albola, the highest vineyard in Chianti Classico. Chianti is a vast area in Tuscany that is divided into seven sub-zones. Chianti Classico stretches between Florence and Siena. To be a Chianti Classico, the wine has to be a blend of at least 80% Sangiovese and 20% of other varietals such as Canaiolo, Colorino, Cabernet Sauvignon or Merlot. This chianti is a DOCG which stands for Denomination of Controlled and Guaranteed Origin and is a designation that was created in 1980 to differentiate the top Italian wines. Enjoy! Feudo Principi di Butera Grillo Type: Grillo Varietal composition: 100% Grillo Vineyard Location: Sicily, Italy Vintage: 2017 Alcohol: 13% Tasting Notes: Pale gold with subtle green hues, aromas and flavors of fresh citrus and pineapple followed by vibrant acidity and a hint of minerality Food Pairings: Pair with our Burrata with Lomo and Basil and topped with Apricot Sauce Cheese Club Pairing: For this month’s cheese club, pair with the Locatelli Saracino Peperoncino. The vibrant acidity of the wine cools the heat of the creamy, red pepper notes in the cheese. Castello di Albola Chianti Classico DOCG Type: Chianti Varietal composition: 95% Sangiovese, 5% Canaiolo Vineyard Location: Radda, Chianti Classico, Italy Vintage: 2015 Alcohol: 13% Tasting Notes: Ruby red color with aromas of strawberry, cherry and dried herbs that flow into flavors of vibrant cherry and notes of baking spices with polished tannins and a delicate finish. Food Pairings: Pair with our Bacon Wrapped Marcona Almond Stuffed Deglet Noor Dates Cheese Club Pairing: For this month’s cheese club, pair with the Auricchio Pecorino al Tartufo. The must then undergoes temperature-controlled fermentation (16-18C/60-64F) in stainless steel tanks, remaining on its lees for 4-6 months. Finally, it is aged for few months in the bottle. COLOR A clear and pale gold with green hues. BOUQUET Fresh and crisp with notes of citrus, pineapple and subtle hint of mint. PALATE Rich and well-balanced, with vibrant acidity and hints of minerality. FOOD COMBINATIONS Perfect with seafood, vegetable-based dishes and light pastas.     _____________________________________________________________________ CREDIT Research Paper No. 12/01 _____________________________________________________________________ Origins of the Sicilian Mafia: The Market for Lemons by Arcangelo Dimico, Alessia Isopi, Ola Olsson Abstract Since its first appearance in the late 1800s, the origins of the Sicilian mafia have remained a largely unresolved mystery. Both institutional and historical explanations have been proposed in the literature through the years. In this paper, we develop an argument for a market structure-hypothesis, contending that mafia arose in towns where firms made unusually high profits due to imperfect competition. We identify the market for citrus fruits as a sector with very high international demand as well as substantial fixed costs that acted as a barrier to entry in many places and secured high profits in others. We argue that the mafia arose out of the need to protect citrus production from predation by thieves. Using the original data from a parliamentary inquiry in 1881-86 on all towns in Sicily, we show that mafia presence is strongly related to the production of orange and lemon. This result contrasts recent work that emphasizes the importance of land reforms and a broadening of property rights as the main reason for the emergence of mafia protection.     PICOLIT D.O.C. COLLI ORIENTALI DEL FRIULI − Controlled and Guaranteed Designation of Origin Sweet white wine prized of a straw yellow, delicate scent reminiscent of honey and wildflowers, taste warm, harmonious, sweet with a pleasantly bitter aftertaste. GRAPES: 100% Picolit VINE: Indigenous variety from Friuli, undoubtedly ancient, already cultivated in the Roman imperial period, had the honor to delight the palates of popes and emperors. Among the admirers of Picolit, it also includes Carlo Gol doni, who defines this wine the brightest gem of Friuli wine. Vine arrived today thanks to the work of Count Fabio Asquini of Fagagna who in 1700 saved this precious vine f rom certain death. It was the same Asquini that made him known to the "foreigners" in high−prestige markets su ch as London, Paris, Genoa, Milan, Ancona. The Picolit was appreciated and consumed not only in Italy, but he found among his great admirers even the Court of France, the Papal Court and even the King of Sardinia, the E mperor of Austria and the Czar of Russia. The Picolit is characterized by very limited production due to a peculiarity in the development of the grapes that undergo a partial floral abortion, leaving the loose bunch with smaller and sweeter grapes. Today it is cultivated in the hills of Friuli Venezia Giulia, in the provinces of Udine and Gorizia. The 2006 vintage is the first as Denomi nation of controlled and guaranteed origin and thanks to his particular value, Picolit is the second denomination of controlled and guaranteed origin of the whole Friuli Venezia Giulia.
