Many thanks to one of our readers who called to say that we were featuring too many canned foods and not enough fresh fruits and vegetables in our featured recipes. Then the president proposed a 2019 budget that would, among other cuts: • Eliminate several provisions of the Affordable Care Act that help moderate-income people obtain health insurance, and low income adults obtain Medicaid. • Impose a per capita cap on Medicaid funding for seniors, people with disabilities and low income families. • Let states eliminate protections for people with pre-existing conditions. • Reduce food, housing and energy assistance for families. • Slash many other programs that would impact seniors and families.

The common acronym for the standard American diet is SAD, and the consequences of our diet can be heartbreaking. Preventable diseases such as heart disease, diabetes, obesity, and others have increased dramatically over the last 30 years. Many of these diseases are directly linked to our diet and lifestyle choices. The food industry has taken a dramatic lean towards fast and convenient foods at the sacrifice of healthful choices. Processed foods have saturated our grocery stores and pantries. Restaurants lure us in with quick meals that are calorically dense enough to feed a small army. There are so many different approaches to diet, and so many experts promoting “THE ONE” diet for ultimate health. Low carb, low fat, Atkins, Vegan, Paleo, Mediterranean, Whole 30, The Cabbage Soup Diet, The Potato Diet, The Grapefruit Diet, The Master Cleanse… I could go on for some time with this. With so much conflicting information out there, how do we know what the right way to eat actually is? As appealing and simple as cookie-cutter diet plans seem, there is no ONE right way to eat. As we talked about in last month’s column, every single body is different, with unique needs. The human body needs a variety of nutrients found in both plant and animal foods. However, the balance of how much you should eat of what is very individual. One person might thrive on a vegetarian diet, where as another person would do much better with red meat consumption. Some bodies do great on a high fat, low carb diet. Others need higher carbs and less fat. I recommend working with a medical professional who is well-studied in nutrition to formulate an individualized plan designed to meet your nutritional needs. That being said, here are a few general guidelines for healthy eating. Be careful of plans that eliminate entire food groups such as fats, proteins, or carbohydrates. Also be wary of any diet plan that focuses exclusively on one type of food, like exclusively fruit or only meat; we need a variety of foods to be healthy. A solid foundation of plant based foods, especially cruciferous vegetables like broccoli and Brussel sprouts, is vital. Animal proteins like beef, deep sea fishes, eggs and more provide nutrients that are critical for our health. Healthful eating doesn’t have to be complicated. Simply put, eat a variety of real foods. What is diabetes? Diabetes is a disease in which blood glucose levels are above normal. Most of the food we eat is turned into glucose, or sugar, for our bodies to use for energy. The pancreas, an organ that lies near the stomach, makes a hormone called insulin to help glucose get into the cells of our bodies. When you have diabetes, your body either doesn’t make enough insulin or can’t use its own insulin as well as it should. This causes sugar to build up in your blood. Diabetes can cause serious health complications including heart disease, blindness, kidney failure, and lower-extremity amputations. The three main types of diabetes are: type 1, type 2, and gestational diabetes. Another condition called prediabetes is almost always a precursor to type 2 diabetes. Modest behavior changes can prevent or delay the onset of type 2 diabetes in people who have prediabetes.

Diabetes Self-Management Healthy Living with Diabetes (HLWD) is an evidence-based workshop for people who have diabetes pre-diabetes. Developed at Stanford University, the workshop meets for 2-1/2 hours once a week for six weeks. The program is interactive, building participants’ confidence in their ability to manage their health condition and maintain active and fulfilling lives. It is facilitated by two trained leaders in a small group setting. Much of the learning comes from sharing and helping others with similar challenges. By Nancy Hofstetter, APS hen an individual is in need of hospice, it can be a confusing and stressful time for family and loved ones. Knowing what the law says can lessen the stress and make the Wwhole process smoother. Cathy named her husband, Tom, her Power of Attorney for Health Care agent. Cathy shared her end-of-life wishes with her husband and their six adult children. Everyone was pleased Cathy had her desires in writing, and they were comfortable in the decisions she outlined, knowing Tom could confidently make decisions should the time come. At age 85, although mentally alert with a great sense of humor, Cathy was physically frail and weak. She was diagnosed with kidney failure along with other serious medical issues, and was declining rapidly. The family was connected to a local hospice agency. Cathy was admitted into hospice quickly without her Power of Attorney for Health Care being activated. Cathy received the comfort care measures she had desired. According to Wisconsin State Statutes ‘Hospice’ refers to any organization, program within an organization, or a place that primarily provides palliative care to an individual with terminal illness and arranges for short-term inpatient care and treatment. A “Hospice patient” is an individual in the terminal stage of illness who has an anticipated life expectancy of 12 months or less and who has been admitted to hospice. The Power of Attorney for Health Care (POA-HC) does not have to be activated in order for someone to make hospice admission decisions. While activation of a POA-HC involves two physicians determining a person is incapacitated, or unable to make their own healthcare decisions, this process is not needed for hospice admission. A decision-maker or ‘Representative’ for hospice admission purposes can be a spouse or domestic partner, an adult child, a parent, an adult sibling, a close friend or a relative. The close friend or relative must be at least 18 years of age and had maintained sufficient regular contact with the person to be familiar with the person’s activities, health and beliefs. They must have exhibited special care and concern for the person. In addition, at any time, the individual, although incapacitated, can at any time revoke or refuse hospice care.
