    From Sweets to Science The Transformation of 250 Massachusetts Avenue 2 From Sweets to Science Transforming an almost 80-year-old candy factory into a state-of-the-art laboratory to enable, stimulate, and excite world-class scientists to research and discover innovative drugs, took the dedication, creativity, and inexhaustible energy of hundreds of people. The former candy factory owned and operated by the New England Confectionery Company (NECCO), at 250 Massachusetts Avenue, was identified as the headquarters of the Novartis Institutes for BioMedical Research (NIBR) in August 2002. Novartis communicated to an experienced team of architects and designers at The Stubbins Associates, Inc., the need to “invent” an interior environment that would encourage, foster, and facilitate collaboration and the exchange of ideas and knowledge between scientists. To operate as an efficient and productive organization, the building would have to: • Emphasize openness and transparency • Promote informal social interaction • Integrate interacting scientific disciplines • Make an efficient use of space • Energize the scientists The architects and designers planned a renovation that set new standards of laboratory design. John Moriarty & Associates, Inc. was contracted to do the job, and they fulfilled their task on budget and in record time. The NIBR global headquarters has been occupied and operational since April 2004. In 1853, railroad tracks were laid, and in 1890, Massachusetts Avenue was FACT: constructed, spurring commercial development. 2,000 miles of telephone and data cables The former NECCO building and its accompanying buildings were completed and occupied installed in 1927 and became the world headquarters for NECCO.

Schmidt Abstract The stages of sugar cooking, although long-existing and widespread in the confection industry, are lacking in thermal behavior profile descriptions, which are crucial to confection functionality. Thermal behavior parameters, such as the glass transition temperature (Tg), are indicative of confection material structure and textural behavior. Tg plays an important role in governing the quality and shelf life of sugar-based confection, and is influenced by moisture content, formulation, and other factors. This study aimed to connect thermal behavior parameters to the stages of sugar cooking. Thus, the objective of this research was to investigate the thermal behavior of the six stages of sugar cooking, as well as representative commercial confections from each stage. A model sugar-based confectionery system was developed and representative commercial confections belonging to each stage of sugar cooking were selected. The model system consisted of a 70:30 ratio of sucrose to corn syrup and a 70:30 ratio of solids to moisture. To investigate the thermal behavior of the stages of sugar cooking, differential scanning calorimetry (DSC), moisture content, and water activity analyses were conducted for the model system and representative commercial confections. The average Tg midpoint of the model system increased from thread to hard crack stage, corresponding to loss of water from increased cooking time and temperature.

    Orange Salt Water Taffy Ingredients 2 cups sugar 2 tablespoons corn starch 1 cup light corn syrup ¾ cup water 2 tablespoons butter (plus about half a stick more for greasing your hands and equipment) ½ teaspoon orange extract 1 teaspoon orange food coloring (optional) Directions Butter a large glass or metal bowl, a heat safe spatula, and the blades of a pair of kitchen scissors. Measure the flavoring and food coloring (if using) into a small dish. Cut about 50, 6-inch squares of waxed paper. Put a half-stick of butter on a small plate near where you'll be working. Basically, get everything you will need all prepared, so that you don't have to do it with sticky-taffy- hands later. Then, set that all to the side, and mix the sugar and cornstarch in a large saucepan. Add the corn syrup, water, and butter. Stir everything together and put the pot over medium heat, stirring until the sugar dissolves. Allow the mixture to come to a boil for about 3 minutes, then using a candy thermometer, heat it to 260 degrees Fahrenheit. Working quickly, remove the pan from the heat, add the flavoring and food coloring, and stir.
