To cure we only use the finest sea-salt and time. The fish is allowed to take up the cure naturally, it’s the only way to ensure a firm texture. The smoking is quite unique. Using the old style traditional brick kilns and wind blown, seasoned oak-logs which burn 24/7. This constant, cool smoky air drifts through the fish slowly, drying and naturally preserving it. The whole process can take up to 48hrs and the result is a wonderful, firm, yet delicate texture with robust smoky flavours. We select only the leaner fish in their prime which are less fatty giving that excellent texture when smoked. There are no artificial preservatives or additives, just superb craftsmanship and time.
