The 14th Young Musician of the Year competition took place last Friday and Saturday, with some 200 students taking part at the Kerry Diocesan Youth Service centre, Fair Hill, Killarney. The INEC Acoustic Club was the venue for the finals-night concert on Saturday night. Doireann, who is a student at Kerry School of Music of international award-winning concert pianist Mantautas Katinas, performed Sergei Rachmaninoff’s Prelude in C sharp minor. She was one of six finalists from Killarney, Tralee and Milltown, the others being Oisin Treacy, Louise Sullivan, Charlotte O’Halloran, Emily Sullivan and Mikaela O’Sullivan. FOCUS ON HERBACEOUS PERENNIALS What we mean when we call a plant an Herbaceous Perennial is that in most of the them the stems are soft, succulent and green as opposed to being brown and woody. With most Herbaceous Perennial they will sprout growth from ground level in Spring and will grow and flower right through the Summer and into the Autumn. With most Herbaceous Perennials in late Autumn and early Winter they start to look a bit ragged. But depending on the severity of the Winter some will hold on until the first real cold snap. The maintenance for most Herbaceous Perennials isn’t a lot really. During late Autumn early Winter cut the majority of them down to ground level and mulch over with some compost. Some Herbaceous Perennials such as Lupins and semi hardy Fuchsias will have woody stems because of the milder climate here so when pruning back cut right back to just a couple of inches above ground level. Herbaceous Perennials are a valuable plant in the garden for a number of reasons. 1. Because of the length of time they flower for. 2. Because of the short length of time it takes them to grow to the maximum height and spread. When planting a Herbaceous Border always remember to plant the taller ones to the back or middle and the smaller growing ones to the front. When choosing your plants pick one plant that you can repeatedly plant in the border to create a sense of continuity to the planting scheme. Herbaceous Perennials flower from April until October/November so you have a wide range of flowering times and colour to choose from. The secret to having a good flowering Herbaceous Border is every few years in the Winter to lift and divide the plants that are suitable for this. Next week I will focus on Roses.

RECIPES OF THE WEEK ST. PATRICK’S DAY TREATS - POTATO CAKES WITH SMOKED SALMON • 3 medium potatoes, quartered • 100g flour, plus extra for dusting • ½ tsp baking powder • For the topping • 150g pack full-fat soft cheese • 200g pack smoked salmon • half a small red onion, thinly sliced • 1 tbsp caper, drained • zest 1 lemon Method 1. Make the potato cakes. Bring a large pan of salted water to the boil. Tip in the potatoes and cook for 10-15 mins until soft. Drain well, then return to the hot pan for 1-2 mins to allow any excess moisture to evaporate. Pass the potatoes through a ricer or sieve to get a really fine mash. 2. Weigh out 250g of the mash and place in a bowl (you shouldn’t have much left over). Tip in the flour, baking powder and 1 tsp salt. Mix together until the mixture forms a soft dough. Shape into a ball, then tip out onto a lightly floured surface. Roll out into a circle about 20cm across and 1cm thick. Cut into 8 triangular wedges and generously dust all over with flour. The potato cakes can be made up to this point 1 day ahead and chilled or frozen for up to 1 month. 3. Set a large, non-stick frying pan over a medium heat (no need to add oil). When hot, dry-fry the cakes for about 3-5 mins on each side until golden and cooked through. You may have to do this in batches. Stir a little water into the soft cheese until it is spoonable. Place the potato cakes on plates, top with dollops of soft cheese and a smoked salmon slice, then scatter over the red onion, capers and lemon zest to finish. MARMALADE & WHISKY BREAD & BUTTER PUDDING • 8 slices day-old crusty white bread, crusts removed • 50g very soft butter • 4 tbsp Seville orange marmalade, plus 4 tsp • 300ml full-fat milk • 248ml pot double cream • 3 large eggs • seeds 1 vanilla pod • 4 tbsp golden caster sugar • 1 tbsp whisky • icing sugar, for dusting Method 1. Butter each piece of bread on both sides, then spread 4 with the 1 tbsp marmalade each. Pop the remaining bread on top to make 4 marmalade sandwiches. Cut into triangles and nestle in rows in a large baking dish. Heat oven to 160C/140C fan/gas 3. 2. Beat the milk, cream, eggs, vanilla, sugar and whisky together, then pour over the bread. Leave to soak for 30 mins. 3. Dot the remaining marmalade all over the top of the pud and dust with the icing sugar. Bake for 45 mins-1 hr or until puffy and starting to caramelise where the bread breaks out of the custard. Serve hot or warm.
