May 2015 About Pigs Pigs are highly intelligent, social animals, displaying elaborate maternal, communicative, and affiliative behavior. Wild and feral pigs inhabit wide tracts of the southern and mid-western United States, where they thrive in a variety of habitats. They form matriarchal social groups, sleep in communal nests, and maintain close family bonds into adulthood. Science has helped shed light on the depths of the remarkable cognitive abilities of pigs, and fosters a greater appreciation for these often maligned and misunderstood animals. Background Pigs—also called swine or hogs—belong to the Suidae family1 and along with cattle, sheep, goats, camels, deer, giraffes, and hippopotamuses, are part of the order Artiodactyla, or even-toed ungulates.2 Domesticated pigs are descendants of the wild boar (Sus scrofa),3,4 which originally ranged through North Africa, Asia and Europe.5 Pigs were first domesticated approximately 9,000 years ago.6 The wild boar became extinct in Britain in the 17th century as a result of hunting and habitat destruction, but they have since been reintroduced.7,8 Feral pigs (domesticated animals who have returned to a wild state) are now found worldwide in temperate and tropical regions such as Australia, New Zealand, and Indonesia and on island nations, 9 such as Hawaii.10 True wild pigs are not native to the New World.11 When Christopher Columbus landed in Cuba in 1493, he brought the first domestic pigs—pigs who subsequently spread throughout the Spanish West Indies (Caribbean).12 In 1539, Spanish explorers brought pigs to the mainland when they settled in Florida. -

We analyzed energy, total fat, saturated fatty acids (SFAs), monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (PUFA), cholesterol, protein, carbohydrates, nine minerals, and nine vitamins. We included five sub-groups: butter, vegetable oils, margarine and other hydrogenated vegetable fats, olive oil, and other animal fats. The basis for our analysis was data from the 2016 household budget survey, conducted on a representative sample of the Polish population (36,886 households, n = 99,230). We used the cluster analysis to assess the impact of socio-demographic and economic factors on the volume of fats and oil consumption and on the share of particular products in the supply of energy and nutrients. Our findings indicated that fats and oils contributed 32.9% of the total fat supply, which placed these products in first position among main food groups. Meat and its products ranked second (30.8%) in the total fat supply, while milk and dairy products, including cream (13.4%), were the third food group. -

It exemplifies this with the domestication and current use of the pig (Sus domesticus). After a brief review of the process of domestication, the paper looks at modern production and the increase in concerns for animal health, welfare and performance and the link to food for human consumption. The paper elaborates on the extreme nature of intensive pig production systems and the role that design plays in their operations. It points out the prototypical nature of the modern pigs’ evolution and the means by which man contributes his own prototypes to these changes. It pays some attention to the often conflicting concerns of efficient production and animal welfare. It exemplifies this in a brief study of 2 design products - floor systems and feeding systems, and through the use of a Holmesian type puzzle, shows the complex interrelationships of the two products. The paper emphasises the need for designers to avoid extreme anthropomorphism, adopt whenever possible a zoocentric and salutogenic (health oriented) approach and remain fully aware that all technical decisions are also likely to be ethical decisions. The paper concludes with some suggestions of what might be incorporated into the curriculum of product design courses. -

Flaky Lard and Butter Pastry Yield Enough dough for two 9-inch single-crust pies or one 10-inch double crust pie Time About 30 minutes of active time, plus three 20- to 30-minute periods of refrigeration to rest the dough between turns Baking Notes This pastry recipe, a standard pie dough with “turns,” can also be called a semi-puff pastry. Semi-puff has the virtue of being simpler to execute than classic puff pastry while producing exquisite flakiness and a bit of lift that gets close to the real deal. Close enough for us. The turns also give the dough unflappability in terms of handling. Each full turn involves rolling the dough out into a long rectangle and folding it across itself into thirds. Then the process is repeated. The dough will show chunks of butter at the early stages and look scraggly and ragged. But with successive turns it will become easier to work with and progressively tidier. As with all of Anson Mills heirloom flours, this pastry flour hydrates slowly. The initial rough dough may feel dry, but resist the impulse to add additional water. All the ingredients for this crust should be frozen first. Of course, your flour is already frozen, right? Because Anson Mills flour lives in the freezer. The lard will be frozen, too. Freeze the butter for a half hour before making the pastry. Equipment Mise en Place For this recipe, you will need a digital kitchen scale, a food processor, a large mixing bowl, a rubber spatula, a bench knife, plastic wrap, a rolling pin, and a ruler. -

Price1 The International Union for the Conservation of Nature’s (IUCN) Red List of Threatened Species is a comprehensive database of over 120,000 species and is a powerful tool to evaluate the threat of invasive species to global biodiversity. Several problematic species have gained global recognition due to comprehensive threat assessments quantifying the threat these species pose to biodiversity using large datasets like the IUCN Red List of Threatened Species. However, the global threat of wild pigs (Sus scrofa) to biodiversity is still poorly understood despite well-documented ecosystem level impacts. In this study, we utilized the IUCN Red List to quantify the impacts of this globally distributed species throughout its native and non-native range. Here we show that wild pigs threaten 672 taxa in 54 diferent countries across the globe. Most of these taxa are listed as critically endangered or endangered and 14 species have been driven to extinction as a direct result of impacts from wild pigs. Our results show that threats from wild pigs are pervasive across taxonomic groups and that island endemics and taxa throughout the non-native range of wild pigs are particularly vulnerable. Global biodiversity is decreasing at an alarming rate with species extinction rates 1000 times greater than natu- ral background rates and anticipated to be 10,000 times greater in the future 1. Te establishment and spread of invasive species are among the primary drivers of these losses as they directly afect native species and can infuence ecosystem change through disturbance 2–4. -
