Add onion with a pinch of salt and cook until softened and beginning to brown, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add remaining ingredients and cook, stirring often until mixture releases moisture and is boiling, 4 minutes. Reduce the heat to low, cover and simmer for the next 20-25 minutes, stirring occasionally. Once apples have become tender remove from heat and cool to room temperature. Set aside what you need for the grilled pork. The balance will keep in the refrigerator for up to 2 weeks. Add fresh local sweet corn: allow approximately 30 minutes to prepare fresh local sweet corn on the grill. Heat the grill to medium. Pull the outer husks down the ear to the base. Strip away the silk from each ear of corn by hand. Fold husks back into place, and place the ears of corn in a large bowl of cold water with 1 tablespoon of salt for 10 minutes. Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Remove the husks and eat on the cob or remove the ker- nels. Using a grilling rack, prepare some yummy red skin potatoes (again from that local farmers’ market) with onions. Slice the potatoes into medallions and brush with olive oil. Top each with a thick slice of onion. Season with salt and pepper. Grill on medium high and rotate frequently until tender - about 20 minutes. On National Day of Service and Remembrance, Americans pause to reflect on the dev- astating September 11 terror attacks. We commemorate those we lost, and give thanks to the brave first responders that put their lives on the line to help. So, this 9/11, take a moment to remember with us. Although 9/11 started in disaster, it ended up revealing the goodness of humanity. From the drivers that shuttled people away from the scene to the residents of New- foundland who sheltered the occupants of planes that were diverted in the aftermath, we saw the kindness of people in many different ways on 9/11. Countless people showed incredible bravery, compassion, and generosity during this most difficult of days and many afterwards. Just as we commend the bravery of the first responders and the helpers, we must keep alive the memories of the people that didn’t make it. Let us celebrate their lives and make sure that they’re never forgotten. That’s one of the best ways we can honor them—it is incredibly meaningful when the nation remembers collectively. Showing appreciation with discounts at businesses and a mere thank you in public is the least we can do. The truth is there’s nothing comparable we can do to pay back these men and women who risk it all for us. Honoring them on this day is a step.
