Bring to the boil and then reduce the heat and cover the pan and simmer for about 20 minutes until the potatoes have softened. Use a stick blender or food processor to purée the mixture before stirring in the coconut milk and the juice of half a lemon. Reheat and season with salt and pepper to taste.
