6 7 A Night of Gypsy Jazz 4 March, Maan Nam Restaurant, Baluwatar Despite the exceptionally chilly evening–courtesy to the three-day long rain–the second show of the this year’s Nepal Gypsy Jazz Festival, went without a hitch at the Maan nam Restaurant in Baluwatar. A group of jazz artists from Europe along with our very own Hari Maharjan enchanted the audience through the evening with gypsy jazz numbers played with an ensemble of guitars, bass and violin. Organized by JJ Sultans, this is the second year Nepal Gypsy Jazz Festival has been celebrated, starting on February 28. This year the ensemble includes Daniel Givone (France), Greg Pittet (Switzerland) and Hari Maharjan in guitar, Samuel Pont (Switzerland) playing the bass and Xavier Moillen (Switzerland) playing the violin.

Chef Bishwa has extensive experience in French and Mexican cuisine, and worked for five years at Delices de France, as well as a year in Dubai. It was fascinating to watch him and his team at work in the kitchen. In addition to the fresh produce from the farm, the condiments, oils and other seasonings were all of the highest quality, and everything was made with care and great technique. The kitchen clean and orderly, but it was more than that: each member of staff seemed both competent and confident in their roles, and along with the Chef they worked as a smoothly moving team. The farm’s produce also plays a starring role in of the main courses the Chef made that day, the Seared Chicken and the Beetroot Ostrich, served with the broccoli and baby carrots that were far more than just a side for the meat. I especially loved the beetroot and carrot puree that the dishes were served with: the carrot in particular was rich, creamy, delicious and vibrant all at the same time. It is often easy to rely on seasoning or heavy spices in cooking, and while for certain types of cuisine it is warranted, this was food cooked simply but elegantly. The chicken and ostrich were both also cooked to the point of perfect doneness, so that they retained their juiciness without drying out. Oh, and that rosemary turned up in these dishes as well! Even though these were main courses based around meat, the combination of quality vegetables prepared with care made the “sides” command your equal attention. For desert, we tried the Sweet Lime Meringue: even in this, today’s produce is used, not just the limes, but also the mint that provides the final garnish. I was also delighted to sample the Homemade Macaroons and Madeleines, two classic French sweet preparations that are not easy to get right but in this case, were just perfect.
