1 Heat the oven to 180°C, Gas 4. Roll out the pastry to 3mm thick (about the thickness of a £1 coin). Using a fluted cutter, cut out rounds and place in two 12-hole tins, re-rolling the trimmings and cutting out more rounds until all the pastry has been used. Chill while you make the almond topping. 2 Beat together the butter and caster sugar until soft. Stir in the ground almonds, flour and egg. 3 Mix together the mincemeat and apple and spoon 1tsp of the mixture into each pastry case. Top with 2tsp of the almond topping and sprinkle some of the pies with flaked almonds. 4 Bake for 35 mins until golden. Transfer to wire rack to cool then dust with icing sugar over a star-shaped stencil.
