On Tuesday, Kissimmee city sta and commissioners welcomed Aviator College of Aeronautical Science and Technology to the city’s airport. e campus will serve as an extension to the college’s main campus in Fort Pierce with a focus on airframe and power plant mechanics certi cation. Our view Hoping this act of kindness is infectious
A recent act of kindness in St. Cloud confirms that the humanitarian spirit is still alive and well. It set an example that we hope will be an inspiration to others. Felix Rodriguez, a St. Cloud Public Services employee, was so sick in February that doctors put him in a medically induced coma with no relatives at his side. Rodriguez had suffered from double pneumonia, coupled with another viral lung infection. He was in bad shape. To make matters worse, hospital staff in St. Cloud said Rodriguez could become a w ard of the state if no one assumed legal responsibility for making medical decisions on his b ehalf. That’s when the bright side of humanity shined. Rodriguez’s department coworkers, who were by his side while he was in the hospital, scrambled to find a family member. It was no easy feat. They ran into dead ends. But just as fellow employee Matt Baker was about to step up and take legal guardianship of Rodriguez, coworkers found a sister who lived in Puerto Rico. Let’s face it. Mexican Chicken Pie “This recipe only has 1, 2, 3, 4, 5 ingredients so it’s going to be very quick to put together” boasts Stephanie Smith of Changing Tides Gifts. She uses pre-prepared ingredients – rotisserie chicken, tortilla, salsa verde, cheese and cream – layers them like a lasagna and bakes for 30 minutes. “It’s pretty easy,” she says, “and it makes a fabulous dinner.”
Smith highlights just how versatile a rotisserie chicken can be. She uses half her chicken to make enough for two people and then saves the rest for a chicken curry salad the next day. You could make all manner of salads with the leftovers – how about a Vietnamese chicken salad with vermicelli noodles, red onion, crushed peanuts, cilantro and mint, dressed with fish sauce and lime? Or what about using the leftovers in place of chicken breast in a chicken Caesar salad? Alternatively, you could mix it with some mayonnaise for the perfect sandwich filler. And don’t forget you can make a delicious stock with the bones.
Quite apart from the fact that it tastes great and it’s easy to make, Smith says one of the great things about this dish is that it “looks like you’ve slaved forever over a five minute meal.” She suggests serving it with a side of vegetables and a squeeze of fresh lime. Her verdict? “Awesome. You really have to try this recipe.”
Ingredients Instructions 1/2 pre-roasted whole chicken, meat shredded (or equivalent pre- Pre-heat oven to 375 degrees F. 1. Place a layer of the shredded chicken over the tortilla strips. ½ pound mozzarella or other crumbly cheese 4. Place a layer of crumbled cheese onto the chicken layer. Cover with more of the salsa. 5. Repeat layering with tortillas, chicken and cheese. Finish assembling by adding heavy cream over the top. ½ cup heavy cream Cook in 375 degree F. oven for about 20 to 30 minutes, until heated through and top is browned. Note: All ingredients are already cooked so you are only trying to heat thoroughly.
Any suitable ingredients can be substituted or added. Stephanie often uses vegetables such as sautéed squash from her garden in summer. What’s On The Side? Roasted Tomatillo Salsa Instructions 1. Take off the outer husk of the tomatillos. Slice them in half and lay them on a pan lined with aluminum foil. Broil in oven until browned and almost burnt on top. 2. Roughly chop the onion, garlic and cilantro into fine pieces. Add all to a mixing bowl. 3. Squeeze the juice from the lime into the bowl. Add a pinch of cumin and salt to taste. 4. After roasted tomatillos have cooled, place them into a separate bowl and let cool. Using a hand blender, roughly puree the tomatillos. Note: You can also use a blender or a food processor to puree them. 5. Mix the tomtillos together with the other ingredients. Season to taste, adding a pinch of chili powder and another pinch of cumin if desired. (Be careful not to over power the salsa with too much cumin or chili powder.)
