TECHNICAL CHARACTERISTICS: ALCOHOL = 14% vol RESIDUAL SUGAR = 1,7 gr/lt pH = 2,9 TOTAL ACIDITY = 7,2 gr/lt (tartaric acid) VOLATILE ACIDITY = 0,6 gr/lt (acetic acid) FREE SO2 = 35 ppm TOTAL SO2 = 100 ppm

Type: Dry White Wine.

Classification: Protected Designation of Origin «Santorini» (PDO).

Vinification: Typical, white wine vinification techniques, which take place in French, oak barrels of 225Lt 300 Lt and 500Lt. New oak is used, at a % of 30 and the rest is of 2 nd or 3rd use. The “sur lies” method is applicated for 6-9 months.

Colour: Yellow, with golden hues.

Nose: Complex, with citrus and minerality, harmonically balanced with discreet vanilla essences and tobacco.

Taste: Round and smooth in mouth with the acidity, being the back - bone, that allows it to age. More petrol aromas, nuts and honey-suckle appear in aged Assyrtikos, like the German and Alsatian Rieslings.

Ageing potential: Over 7 years.

Serving suggestions: Sea-food, fatty fish, smoked salmon, white roasted meat (es. chicken) and spicy sauces, at 12° C.
