Job Title: Beverage Manager

Reports to: Operations and Quality Manager

Purpose of the role: We are seeking an exceptional and highly skilled Beverage Manager to manage all aspects of our bar services for our fixed sites and external venues. The successful candidate will have at least 3 years’ experience in a management role within a beverage and food environment. As Beverage Manager you will be responsible for managing the daily upkeep of our fixed bars, overseeing the requirements for any outside bars at events and delivering our mobile bar service. Further, you will be responsible for recruiting, training and scheduling a highly skilled and motivated team to deliver outstanding and profitable service at every event. You will achieve the highest possible standards of customer service whilst maximising sales and cleanliness. Experience of all stock and cellar management is essential together with knowledge of wine and cask ales. In addition to having barista and mixology qualifications you will have experience of training and managing staff. Your performance within the company will be monitored by achieving budgets regarding beverage, dry goods revenue; maintaining correct liquor margins, guests comments/feedback and employee retention.

Key responsibilities:  Meeting agreed targets in liquor sales and achieving yearly growth as outlined in liquor business plan  Overseeing the delivery of all liquor requirements at every event  Creating, launching and managing the successful implementation of our mobile, outside bar service  Recruiting, training and scheduling all beverage staff required to deliver the agreed targets  Stock management, stock reconciliation and setting up of formal monthly stock audits including all liquor orders, ensuring that company margins are adhered to and overseeing that weekly/monthly stock takes are completed  Ensure the smooth and efficient delivery of all liquor requirement during events through regular training and the implementation and management of policies and procedures  Maintaining the upkeep and condition of our fixed bars  Maintaining the upkeep and condition of all bar related equipment  Ensuring that all licensing legislations are adhered to  Enforcing health and safety rules at all times  Adhering to set budgets and increasing profits  Responsible for supplier liaison, negotiation and procuring all bar stock at the agreed cost set by the business  Responsible for creating a unique and interesting bar offering which focuses on quality wines, unique cocktails and a selection of beers and spirits ideally from local suppliers  Working alongside our Finance team, responsible for overseeing the accurate delivery of floats/return of cash takings

Skills and Capabilities:  Experienced and trained to work within the Catering and Events Industry  Hold a current UK licence and have access to own transport  Personal Licence Holder  Experienced in stock and cellar management  Confident in wines/spirits/craft ale knowledge  Possess relevant barista and mixology qualifications  First Aid Trained  Well planned with excellent attention to detail  Experienced in managing both time and people  Possess clear and logical management experience to meet the needs of a fast paced environment  Exceptional customer handling skills  Committed to delivering a quality customer service  Ability to motivate and encourage colleagues to provide exceptional service to customers  Exceptional organisational skills  An understanding of the Events/Leisure Industry  Outstanding IT skills – including Microsoft Office Suite  Confident in verbal and written communication  Financially astute to the needs of the business, including budget sustainability  Ability to meet deadlines, manage time effectively and drive teams to meet deadlines with accuracy  Flexible and adaptable  Accountable for personal and departmental performance  Responsive to needs of customer and colleagues  A team player  Ability to act as an ambassador for the company Hours:  5 days out of 7 to include evenings and weekends totalling 40 hours to suit the needs of the business

 Willingness and flexibility to work outside these hours when necessary to meet the requirements of the job

 28 days holiday including public holidays

 Holidays to be taken to suit the seasonal needs of the business

Salary  Competitive, dependent on experience

Location:  Based at HICKORY – GH Event Catering, Eskmills Venue, Eskmills Park, Station Road, Musselburgh, EH21 7PQ

 Responsible for overseeing the fixed bars at Eskmills Venue and Dunglass Estate, Cockburnspath, East Lothian, TD135XF, as well as at any external venues we work with
