16 March 2015 The Peninsula Shanghai Welcomes New Executive Pastry Chef Lucien Gautier from Paris

The Peninsula Shanghai is pleased to welcome Lucien Gautier as its new Executive Pastry Chef. Born and educated in France, Chef Gautier has worked at respected restaurants across France and the United States. Most recently, he was Executive Pastry Chef for the Four Seasons Hotel George V, Paris, and his responsibilities included creating delightful desserts for the hotel's two- Michelin-starred restaurant Le Cinq.

Chef Gautier has won ten prestigious culinary awards during his career, which spans 15 years. These honours include Un des Meilleurs Ouvriers de France Finalist in 2010 and 2011, and first prize at Romorantin 2009. He was also named “1er Prix Artistique” at the Trophée Relais Desserts Charles Proust in 2006, and was a finalist in the Championnat d’Europe 2005 at the age of 21.

Chef Gautier grew up in a French culinary family; his father is celebrated Executive Chef Jean- Marie Gautier and his brother and sister are both professional chefs. He graduated from the Haute-Vue Culinary School in Morlaàs, France, specialising in pastry and subsequently undertook an apprenticeship with Meilleur Ouvrier de France Chocolatier Serge Granger.

His first professional appointment was as Chef de Partie at Michelin-starred restaurant Le Bristol in Paris in 2002, followed by restaurant Alain Ducasse at Plaza Athénée from 2005 to 2007. He moved to the United States in 2007 as Executive Pastry Chef at Alain Ducasse’s restaurant Mix in Las Vegas. In 2009, Chef Gautier returned to France to take up the role of Assistant Pastry Chef at the Hôtel du Palais in Biarritz, working alongside his father Jean-Marie Gautier.

In February 2011, the young chef was promoted to the role of Executive Pastry Chef at the Four Seasons Hotel George V, Paris. Chef Gautier arrived in Asia for the first time in February 2015 to take up the role of Executive Pastry Chef at The Peninsula Shanghai. He is responsible for managing the superlative selection of pastries and breads served at Sir Elly’s restaurant, the famous Peninsula Afternoon Tea served at The Lobby, and the hotel’s in-room dining menu. Chef Gautier focuses on traditional desserts, based on authentic recipes and ingredients yet updated with modern presentations and distinctive flavours.
