MINUTES
A meeting of the Springfield Public Schools Wellness Committee Meeting was held Thursday, April 28, 2011.
Attendance: Charis Allenbaugh, Laura Pavlat, Terri Fackrell, Margot McDonnell and Esmeralda Carlos

Mrs. Pavlat shared with the committee an email received from a health assistant at Douglas Gardens regarding the amount of ranch dressing used in the cafeteria. Since Mr. Cole was unable to attend this meeting the committee will address questions in our May meeting regarding the ranch dressing offered to students. Questions such as, is the ranch low fat, does USDA allow ranch in school cafeteria, and how could we monitor the consumption or waste of ranch?
Mrs Allenbaugh showed a cartoon clip “Don’t Drown Your Food” from Vintage Infomercials found on the YouTube website. This might be something we could use to make it fun for kids but intern get the message across.
4. REPORT ON POPCORN COOKING ADJUSTMENT
The modified popcorn recipe was tested by both Mrs. Spangler and Mrs. Allenbaugh, they reported to the committee that the popcorn did not burn but popcorn did not have much flavor. An option to make the popcorn more appetizing is to add seasoning but take into consideration that this could raise the fat content of the popcorn; this could then defeat the purpose of modifying the popcorn recipe.
The committee agreed to add the modified popcorn recipe to the Principals packet that will be provided by the Wellness Committee Group. The recipe should be made official to use in School Year 2011-2012. Mrs. Fackrell believes that it would be easier to get the kids to adapt to the new taste of the modified popcorn recipe if we start using it when students come back from summer break.

Mr. Cole and Mrs. Fackrell met with Matt Coleman Director of Secondary Education to discuss the need to address alternative incentive ideas for schools. Mr. Coleman understands the law is mandating that our schools meet HB2650 guidelines. The Wellness Committee is fully aware that fundraiser groups use the profit to support various school programs. The committee is willing to help make options available to such groups by looking at the items they are currently selling and help them come up with a healthier replacement that meets HB2650 law. An idea is to get students involved to give feedback on healthier food items they would like to have available at schools. Possibly have them taste test, complete a survey, or choose top three favorite food choice. Another option is contracting Subway restaurant or another restaurant to bring in to school stores. The goal is to find a healthier food option for students to purchase at school stores.
Mr. Coleman will assist in setting up meetings during the summer time that will include key leaders in the secondary schools. Mr. Cole will need to follow up with Mr. Coleman to make sure this happens.
6. WELLNESS COMMITTEE SCHOOL INFORMATION PACKET REVIEW
Mrs. Pavlat has not completed the packet containing information regarding HB2650. The plan is to provide school principals a packet that will help them meet mandatory guidelines regarding school stores and school fundraisers. This packet will include a popcorn recipe that meets HB2650. Mrs. Allenbaugh offered to provide articles that could make this packet look appealing. Committee will like to present this packet to the principals meeting in May.
The committee also discussed the need to update the Wellness Committee website page. We need to create a resource area for staff to go to for guidance and have the ability to download information. The plan is to create a tool kit every month to send out to school principals as a reminder to visit the Wellness Committee website for new or current information.
7. ADJOURNMENT
Meeting was adjourned at 5:30 pm.
