. 1 tablespoon olive oil . 1 bell pepper cut into rings . 3-4 eggs (1 per person) . ¼ teaspoon kosher salt . ¼ teaspoon freshly ground black pepper . 3-4 pieces of bread (1 per person) Yield: 3-4 Instructions

1. Cut bell peppers into thick rings. 1 ring per person. 2. Heat the olive oil in a large skillet over medium heat, about 4 minutes. 3. Add the bell pepper rings. Cook 1 minute on each side. 4. Crack an egg into each bell pepper ring. Lower heat to medium-low. Cook until whites are set, 5-10 minutes. 5. Season with salt and pepper, and serve on toast. 6.
