Over the course of this term the Year 3 children have been learning about the Sacrament of the Eucharist. Part of this preparation has meant attending a Commitment Mass and a Parent/Child Information Night. The children been participating in a special Reflection Day on Thursday 28th May. On this day the children will be involved in a series of rotating activities that focus on what the Sacrament of Eucharist means to them. Lastly the children have made some prayer cards that are found in St Mark’s Church foyer. Families are invited to take a prayer card and prayer for that child over the next 3 weeks. The First Communion masses are: Saturday 30th May (6pm), Sunday 31st May (9:30am), Saturday 13th June (6pm) and Sunday 14th June (9:30am). It would be lovely if families from our school community could like to one of these masses to support these children. Below are the names of the children making First Communion. Please keep them in your prayers.

AVOCADO AND CORN SALAD

Ingredients:

 2 firm ripe avocados, halved, stones removed, peeled, finely chopped  1 x 410gm can corn kernals  3 shallots, ends trimmed, thinly sliced  ¼ cup chopped fresh coriander  2 tablespoons fresh lemon juice

Method:

1. Combine the avocado, corn, shallots, coriander and lemon juice in a medium bowl. 2. Serve!

CREAMY SPINACH DIP Ingredients:

 250gms cream cheese  150ml sour cream  1 packet spring vegetable soup mix  2 tablespoons chicken stock  ½ red capsicum  2 spring onions  ½ packet frozen spinach  ¼ bunch parsley

Method:

1. Place cream cheese, sour cream, soup mix and chicken stock into a bowl and mix well. 2. Chop capsicum very finely, add to cream cheese mix. 3. Using scissors, snip spring onion and parsley very finely and add to bowl. 4. Add defrosted spinach and mix well together. 5. Serve with biscuits and vegetable sticks. POTATO AND HERB CROQUETTES

Ingredients:  4 large potatoes

 ½ cup of tasty cheese

 Finely chopped fresh herbs as available

 breadcrumbs

 cooking oil

Method: 1. Chop potatoes into approximately 1cm cubes. Boil with a little water until very soft then mash and season. Set aside and allow to cool for 5 minutes, then stir through cheese and herbs.

2. Place the breadcrumbs in a bowl. Scoop up one tablespoonful of the potato mixture and roll into a flat circular shape. Roll the croquette in the breadcrumbs shaking off any excess.

3. Place on a plate. Repeat with remaining potato mixture.

4. Add enough oil in a non-stick frying pan. Heat oil over medium- high heat around 7/8.

5. Add croquettes to the oil and cook for 2-3 minutes or until golden brown then turn to cook the other side.

6. Remove using a slotted flip to transfer to a tray lined with paper towel. Keep in oven prewarmed to 120C.

7. Repeat, in batches, with the remaining croquettes, replenishing the oil between batches. Basic bread

Ingredients:

 600ml warm water  2 tbsp honey  800gms plain flour  200gms whole wheat flour  1 tsp salt  14gms instant dry yeast  vegetable oil for oiling bowl

Method:

1. Combine the water and honey in a small bowl, and stir to dissolve the honey. 2. Tip the flour into a large bowl and add the salt and yeast. Stir once or twice with a wooden spoon. 3. Make a well in the centre of the flour, then pour the water and honey mixture into the well. 4. Stir to mix the flour and water to form a heavy dough. 5. Sprinkle flour on a clean dry surface. Pat some flour onto your hands. 6. Tip out the dough and pat all the pieces into a pile. Squash it down, using your hands to put it all together. 7. Knead the dough for 5 minutes. 8. If the dough feels sticky, sprinkle it with more flour. 9. Lightly oil a large bowl and put the dough inside. 10. Cover the bowl with a clean tea towel and leave it for at least 30 minutes in a warm place (not too hot) 11. Preheat the oven to 200 degrees celsius 12. When the dough has doubled in size, make a fist and punch straight down once into the dough to release all the air. 13. Tip your dough onto the floured surface and knead again for 30 seconds. 14. Shape the dough into a round ball and place on an oven tray. 15. Cover with a teatowel and leave to rise again for 30 minutes. 16. Put the dough in the tray with the dough in the oven and bake for 20-25 minutes. 17. After 20-25 minutes carefully take the tray out of the oven. 18. Tap the bottom of the bread with a finger and listen carefully. The sound should be a hollow ‘tonk’ like a muffled drum. Allow to cool a little before serving.
