Food Hygiene (Scotland) Regulations 2006 EC Regulation 852/2004 Premises: Mossblown Chinese, 18 Station Road, Mossblown, South Ayrshire, KA6 5DS

I refer to my visit to the above premises on 31st May 2012 and now enclose details of my findings as discussed with.

The attached schedules detail works, which require your attention.

Schedule A details the actions required to comply with the food hygiene regulations

Schedule C details recommendations for food hygiene and/or food standard improvement. You are not required to act on these recommendations; however, they are considered best practice and are based on industry guidance and my experience from visiting many other food businesses. I believe you and your business will benefit from the improvements listed in this Schedule.

A further inspection will be carried out on 9th July 2012 approximately 2:00p.m. when it will be expected that all matters reported in Schedule A will have been received your attention. Failure to do so will result in further enforcement action being taken against you.

Food Hygiene Information Scheme

As part of this inspection, the level of compliance with food hygiene legislation within your business was assessed for the purpose of the Food Hygiene Information Scheme. Your business has been classified as ‘Improvement required’.

Once you have rectified all matters raised detailed in Schedule A you can request a reassessment visit to review your Food Hygiene Information Scheme status.

Environmental Health Officer SCHEDULE A – Food Hygiene

1. Bac Det bactericidal was provided for washing, sanitising food contact tools, equipment and surfaces. You were You were unable to demonstrate that this bactericidal agent complies with BS EN 1276:1997 or BS EN 14697:2001

(EC Regulation 852/2004, Annex II, Chapter V)

You must check if this bactericidal complies with either BS EN 1276:1997 or BS EN 14697:2001. If it does not comply you must ensure that a bactericidal or sanitizer is provided that meets the required standard. The sheet that was left at the time of inspection provides you with further advice on this requirement.

2. Although in general a stock rotation system was in place it was not comprehensive as many food were not covered by your system.

(EC Regulation 852/2004, Chapter II, Article 5)

An effective stock rotation system must be put in place implemented and maintained.

3. There was a build up of dirt on the following areas:-

 On the floor at the side of the refrigerator in the kitchen area.  On one of the adaptors within the store  On the insect screen serving the kitchen area

These areas require to be cleaned.

4. The ceiling within the kitchen area was dirty and discoloured

The ceiling requires to be thoroughly cleaned and thereafter painted.

5. There was mould growth present on the ceiling in the store area.

All mould must be removed then this ceiling must be painted.

6. The interior casings of both chest freezers were damaged. The bracket of one of the chest freezers was also broken

The chest freezers must be suitably repaired and rendered in a sound condition capable of being kept clean.

7. The tin foil that was being used to line the wall was posing a risk of physical contamination.

(EC Regulation 852/2004, Annex II Chapter IX)

The tin foil must be removed as discussed. 8. One of the shelf edging strips was damaged.

(EC Regulation 852/2004, Annex II, Chapter I)

This area must be suitably repaired and rendered in a sound condition capable of being kept clean.

9. Containers of various foods were stacked directly on top of one another in the refrigerator.

(EC Regulation 852/2004, Annex II, Chapter IX)

Due to the risk of transferring contamination from the base of one container to the contents of that below, containers of high risk foods must not be stacked unless each is fitted with a suitable lid, or cover.

10. A bowl was being stored in a container of salt. This bowl was being used as a food scoop and was directly in contact with the salt.

(EC Regulation 852/2004, Annex II, Chapter IX)

A proper food scoop must be used in preference to the bowl. The scoop must not be kept in direct contact with the salt, to protect it from contamination by any person handling the scoop.

11. Sections of the floor covering in the kitchen area were damaged.

(EC Regulation 852/2004, Annex II, Chapter II)

The damaged sections of floor covering must be suitably repaired and rendered in a sound condition capable of being kept clean. SCHEDULE C – Food Hygiene/Food Standards Recommendations
