Jenny wants to cook a healthy dinner for her family. Using the menu below, choose the foods for the lowest-fat, healthiest meal. You must choose one food from each category. For each food you choose, explain why that food is a healthier choice than the others in the category. The response identifies relationships between two or more health concepts; there may 3 be minor inaccuracies. The response shows evidence of the ability to apply health skills; the response is mostly complete but may not be fully proficient. The response presents some accurate information about the relationships between health concepts, but the response is incomplete and there are some inaccuracies. The 2 response shows some evidence of the ability to apply health skills; the response may have inaccuracies or be incomplete. The response addresses the assigned task but provides little or no accurate information 1 about the relationships between health concepts. The response shows little or no evidence of the ability to apply health skills.

Scoring Criteria: The content score is based on the student's ability to explain why some foods are healthier than others within each category, such as:  Entrée: roasting is healthier than frying because less fat is used in roasting  Grain Product: cooking with cream sauce and butter is not as healthy as steaming because cream and butter are higher in fat. Steaming is prepared with water only.  Vegetable: steamed broccoli is the healthiest choice because only water is used in cooking. The cheese sauce contains fat.  Soup: Chicken Noodle Soup is healthier than Cream of Mushroom Soup because it has less fat, unless the Cream of Mushroom soup is made with water or skim milk.  Green salad with Dressing: lemon juice is the healthiest choice because it has no fat. The next healthiest choice is the low fat ranch dressing. The remaining dressings contain fat in the form of oil or within the cheese.  Beverage: Water is healthy because it has no fat. 1% milk is also a healthy choice, because it has very little fat and also contains calcium, which strengthens bones. Soda is unhealthy because it contains a lot of sugar, which is bad for teeth. Soda and Diet Soda often contain caffeine, as does coffee. The skill score is based on student's ability to use decision-making skills to enhance health.
