CULART 050 Culinary Sanitation & Safety Mock Inspection Report

Prepare a research paper on the topics of sanitation and safety. Include the following:

 Define the meaning of sanitation and safety as they relate to food service operations. Explain why these concepts are important.

 Find a food service operation such as a hotel, restaurant, bakery, or cafeteria and interview the manager in order to analyze their procedures to uphold sanitation and safety standards. You will also be completing the following:

o Conduct a mock inspection by completing a Food Facility Self Inspection form (provided by instructor).

o Ask the manager how their operation stays within the parameters of local regulatory control.

o As the manager about the main challenges that may occur in regards to sanitation and safety.

o What solutions are applied to the challenges?

 What solutions would you recommend to help solve the challenges presented?

 Be prepared to share your report in class via power point presentation.

Paper Details:

 Minimum 4 pages – APA Format  Power Point presentation to be presented in front of class.  No fewer than 3 references and please cite your sources according to APA format.  Your report must be type written.  Cover page should include instructor’s name, class section number, student name and date.
