1/2 Fuji Apple - Peeled, Cored and Diced

Fruit salsa

INGREDIENTS:  1/2 Fuji apple - peeled, cored and diced  1/2 cup diced fresh strawberries  1 kiwi, peeled and diced  1 bananas, peeled and diced (DAY 2)  1 ½ teaspoons fresh lime juice  1 tablespoon white sugar  1/4 teaspoon ground cinnamon  1/4 teaspoon ground nutmeg  ½ bag Tortilla chips  Cinnamon and sugar (1/4 cup sugar- 1 (+) TBSP cinnamon) DIRECTIONS: DAY 1 1. Wash fruit properly. Peel, clean and dice Fuji apple, strawberries, and kiwis into small pieces.

2. In a medium bowl, mix together Fuji apple, strawberries, kiwis, lime juice, white sugar, cinnamon and nutmeg. Cover and chill in the refrigerator approximately 20 minutes. LABEL with PERIOD and KITCHEN #.

3. Arrange tortilla chips in a single layer on a lightly greased baking sheet. Spray with cooking spray, sprinkle with sugar and cinnamon, and bake 5 to 10 minutes in an oven preheated to 350 degrees F (175 degrees C).

4. Place cooled tortilla chips back into the bag and save for tomorrow.

Helpful Hints:

Lemon juice keeps fruit looking fresher and diced apples and bananas from turning brown. If you don’t have lemon juice, try adding pineapple juice to the fruit in this recipe. Safety Tip: Washing fruit with fresh, running water is important to remove dirt and germs. It’s best to wash strawberries just before eating so they don’t mold. Even though you peel the kiwi, it’s still important to wash it before cutting.

DAY 2 1. Dice banana into small pieces. Add to apple, strawberry and kiwi mixture.

2. Mix salsa well and serve with cinnamon tortilla chips!
