The Angry Orchard is a 60-acre farm featuring a historic apple orchard in the New York Hudson River Valley. A farm since the mid-1700s, the Orchard’s first apple trees date back at least one hundred years, with the land converted to a full-time apple orchard by the 1950s. The Hudson Valley's rich apple growing history and the exciting craft cider culture make this Walden, New York location a particularly good fit for Angry Orchard. By exploring projects with local universities, community organizations and other cideries, the cider makers at Angry Orchard are working to maximize apple harvests and plant traditional trees – which have been virtually nonexistent in the US since Prohibition – to test which varieties grow the best in New York and make the best cider.

The Valley Flor: A series that showcases the microflora of our Walden orchard. Each cider is delicately fermented using only wild yeasts and traditional bittersweet apples: The Valley Flor - Oval Nouveau: 750 mL bottles at the AO Innovation Cider House. Natively fermented in oak and left to mature on its lees (a process also used when making champagne), this is a dry and unfiltered cider made from bittersweet and sharp apples that showcase the terroir of our Walden Orchard. Our story begins in the orchard. In 1989, we purchased the orchard and began to learn how to cultivate fruit. James and Autumn started Eve’s Cidery in 2001, using apples grown at James’ u-pick orchard. Workhorse Harvest ’15: 750 mL, ABV: 8%. Semi-Dry (2.25% RS), sparkling, fruit forward. Bright citrus and tropical notes, balanced with mouth-watering acidity. A cider for every day. 27

Hardscrabble Cider North Salem, NY www.hardscrabbleciderny.com, @hardscrabblecider Hardscrabble Cider is the epitome of a hand-crafted, farm-to-bottle beverage. All stages of the process take place on the farm – from growing, picking and cleaning the apples, to pressing, fermenting and bottling the final product. The cider is pressed from a blend of all 10 apple varieties grown on site. Fermentation is meticulously monitored and filtering takes place several times to create the cleanest, freshest taste possible. In the end, the cider is hand-bottled and capped and then batch pasteurized to ensure stability. Dry: When crafting our dry cider, we aimed to capitalize on that one characteristic that all customers can appreciate: drinkability. This cider is not back sweetened with much fresh apple cider so it maintains a dry taste.

Cranberry: This cider, infused with the nectar of fresh cranberries, bestows a balance of tart and sweet rarely found in a hard beverage.

Citra: This cider is infused with citra hops throughout the cider making process. With tropical notes and a citrus aroma, this cider finishes crisp and clean.

Fruit of the Farm: This cider incorporates the fresh fruits of the summer; peaches, nectarines, blueberries, and strawberries are all fresh pressed and added back into this cider for a sweet flavor. 28

Stone Fort is about twenty-five percent forage. Tart and lip- smacking, grapefruit, lemongrass, big apple nose with faint pipe smoke, finishes long. Wild Forage: Simply, this cider is pressed from wild apples we have foraged while wandering the northern Catskill Mountains with a burlap sack. It’s how we started, and to this day it’s still our favorite method of crafting cider. Bright and fruity, a wee bit astringent, wet straw on the back-end. Honey Hopped: Our handcrafted cider meets locally grown, organic, NY State Hops, and is back-blended with a touch of our farm’s raw honey — the very honey collected in the pollination of the apple trees from which we press our cider. The hops not only provide a cannabis aroma and a piney top-note, but they help to stabilize the cider, allowing us to crash fermentation a little bit early, leaving some of the honey unfermented. Just a hint of sweet, but more importantly, a hint of distinct flavors you can only find in raw honey; plus — mint, conifer, weed.
