BIRD'S ICE CREAM RECIPE BOOK - RECIPES FOR HEALTHCARE 3 why bird's ice cream?

BIRD'S ICE CREAM MIX IS AN EASY TO USE AND VERSATILE PRODUCT

• It’s easy to make: It really is quick and easy. You only need a bowl and a whisk. Make sure the liquid (water, milk, cream, etc.) is cold so you get a better yield. Once it’s mixed, just freeze. No need for specialist ice cream making equipment, and no need to churn or mix during freezing.

• It’s easy to store: Once made, it takes three hours to freeze. Often Caterers do this overnight. This is very useful if you are managing limited freezer space, as you can make it the day before or even on the same day it is needed.

• It’s space saving: Storage is ambient, and one bag makes 28.8 litres

• It can be personalised: The base element of this product is one of the reasons it works so well in many kitchens. The flavour possibilities are endless; the only limitation is your imagination.

• It’s versatile: Ice cream can be a delicious dessert on its own, as well as an accompaniment to other such as apple pie, sticky toffee , or the classic Jelly and Ice Cream.

• It’s more than ice cream: It was designed to be served frozen. However, it has become very popular as a mousse when whisked and served chilled. Equally, it can be made frozen and then defrosted to be served as a mousse as it doesn’t melt.

The Bird’s Ice Cream Mix can be made with water, milk, or cream. In this guide we also showcase recipes we have developed for ice cream fortified with Marvel. This provides a more protein-rich, nutritionally dense recipe for those needing extra protein. WHY FORTIFICATION?

Elderly people sometimes experience unexpected weight loss. There are many potential reasons for this, including:

• Side effect of medication. • Loss of appetite. • Chronic or physical illness.

A good diet is not about simply increasing weight through fat and calories. A fortified diet high in protein is better because it will help:

• Improve recovery, as protein helps to rebuild muscles and other body structures.

• Maintain health and muscle strength which will aid movement, balance, and agility.

As this table shows, using semi-skimmed milk fortified with Marvel is over twice as effective per ml as any other way of delivering a high protein ice cream. IMPACT OF MILK FORTIFICATION

Product per 100ml Calories Protein

Milk skimmed 34 3.4g

Milk semi-skimmed 49 3.4g

Milk full fat 64 3.2g

Marvel made with semi-skimmed milk 84 7.2g

BENEFITS OF FORTIFICATION ICE CREAM WITH MARVEL MILK POWDER

These include: • High protein increase with minimal volume increase.

• Marvel is a cost-effective way of adding protein to a meal.

• No notable taste difference in richness or texture.

• Not visually obvious when added (unlike cream), due to the low-fat content of Marvel.

• Can be used either as a powder directly into a recipe, or can be made up with cold liquid prior to use.

• Fortified with vitamins A and D, Vitamin A helps with the immune system and vital organs. Vitamin D is synthesised in the body, a process which diminishes in old age, and so supplements are required for good health.
