 System boundaries

The system boundaries are in accordance with the provisions of the PCR 2010:02 version 1.03, 07/23/2013, International EPD program. In particular, the activities are divided into the following processes: Upstream processes cover the operations related to the activity of the countryside and harvest, as well as the production of raw materials and materials (including packaging) used in the product. The Main Phase or Operational Processes (core module) relate to the activities of vinification, bottling and packaging, as well as the transport of raw materials to the production site. Downstream processes cover the distribution of the product and the end of life itself.

In particular, the operations included in the system, broken down by type of process and activity, are:

Upstream Processes  Maintenance of vineyards (includes pruning, treatments and 1. Activities fertilizing the plants and the use of tractors). Country  Harvest (includes unloading and handling of the grapes). 2. Production of raw materials and materials (yeast, potassium metabisulphite, bentonite, bottle, labels, cardboard, cork, etc.).. Operational Processes 3. Transport of raw materials and materials  Pressing and stripping  pressing  Cleaning wine  alcoholic fermentation 2 4. vinification  decant  Malolactic Fermentation  clarification  stabilization  filtration 5. Bottling and  Bottling Packaging  Packaging (including internal handling)

Downstream Processes

6. Distribution (including transport)

7. End of Life (includes disposal / recovery / recycling of the bottle, cap, capsule, label and carton)

2 Fermentation takes place in a natural way, without added sugar, and in accordance with national law and the European Union. The boundaries of the system are represented in the figure below:

End of Life

Figure 1 - the system boundaries

The consumption phase was excluded and not included in the calculation of impacts as it is considered irrelevant by PCR 2010:02 version 1.03, 23/07/2013. The Upstream processes and Operational Processes are carried out in Italy. The product is distributed mainly in Italy. The percentage distribution by region is as follows:

• Northern Italy - 24.90% • Central Italy - 19.04% • Southern Italy - 50.62% • North Central Europe - 2.82% • Europe Mediterranean - 0.78% • Asia - 1.27% • Latin America - 0.25% • Australia - 0.31%

For the distribution of the product in Italy and Europe were considered land transport, while transport by ship was considered for the distribution of the product in Latin America, Asia and Australia.. To estimate the target, an average mileage is identified, based on the most representative city and the center of gravity within the area. Regarding the End of Product Life, it was hypothesized a scenario based on the management and disposal of waste in Italy as it appears to be the main destination of the product. For percentages of final destination of the waste (recycling, incineration, disposal in landfill, etc.) the data provided by consortiums COMIECO, COREVE and RICREA were considered.
