By Denise Spoor Don’t shy away from trying these bars because of the solid shortening. It’s the shortening that makes them moist, chewy and almost indestructible in your backpack. Take them on a group hike for a special treat for all when you reach your destination or bring them on a multi-day backcountry trip for a nutritious and satisfying breakfast as an alternative to plain oatmeal. The key to keeping them fresh and in one piece is to carry them in a reusable plastic container such as Rubbermaid or Tupperware.

Ingredients: ¾ cup vegetable shortening 3 cups quick oats chopped Pineapple, ¼ cup 1 cup packed brown sugar 1 cup all-purpose flour chopped golden raisins, ¼ cup ½ cup granulated sugar 1 teaspoon salt chopped cranberry) 2 eggs ½ teaspoon baking soda ½ teaspoon cinnamon 1/8 cup water 1 cup dried fruit (¼ cup ¼ teaspoon nutmeg 1 teaspoon vanilla chopped apricots, ¼ cup 1/8 teaspoon cloves

Preheat oven to 350 degrees. Generously grease a 9x13 baking pan with solid shortening. Com- bine shortening, brown sugar, granulated sugar, egg, water and vanilla with hand mixer on low speed until creamy. Add the flour, salt, baking soda, spices and mix well by hand until well combined. Add oats and dried fruit and stir well again. Press into prepared pan and bake until lightly browned around the edges and a toothpick inserted into the middle of the pan comes out clean (approximately 20-25 minutes). Do not overcook or the bars will be dry. Cool completely before cutting into bars.
