Karen Reb Rudel Bio

Born and raised in Johnstown, Pennsylvania, Karen grew up with the aspiration to be a comedian, a musician, or both… She groomed these crafts from a young age by making everyone around her laugh and beginning a lifetime romance with the flute at the age of 9. She went on to study drama at Temple University in Philadelph- ia and played in a series of bands. From the age of 30 until she got married, Karen was back and forth between Paris and Philadelphia, working on musical projects and touring (including being the flautist and singer in a Reggae band in Paris). One day her parents came to visit her and Karen, having learned a lot about Paris, was showing them around when her mother exclaimed, “Karen, you would make a great tour guide!” That was the light bulb moment, and as the French say, voila! Paris has been Karen’s stomping ground for over 20 years, and her company is in a unique position to give you the historical background and underground cultural scoops that most walking tours leave out. Now Karen and her Husband Frederic have a beautiful 10 year old son who keeps them very busy.

COVID-19 has put a serious halt to all tourism in Paris for the moment. Paris Virtual Tours is an offering from the guides at Sight Seekers Delight, and has now adapted to our “new normal” by offering Virtual Tour Experi- ences.

Dear Friends: Thank you so much for your interest in Paris and I am going to spend about 90 minuutes sharing photos of now and then whilst explaining exactly as I do on the real tour as if you were here right beside me on the streets of Paris. We will have an open Question and Answer session at the end of the tour. I will also be sending you a list of books and movies that we discuss on all of our tours. This will keep you occupied and hopefully get you excit- ed to share your experience with others and start organizing your next Virtual experience with more and more family, friends, book clubs, Maj groups etc.

Attached to this document is a sample menu with recipes included to make at home to enjoy during your tour. Your feet won't hurt after we are finished but you should be mentally inspired and thirsty for more fabu- lous stories all about Paris.

BON APPETIT FROM PARIS VIRTUAL TOURS ENTRÉE MENU

RADISH AND BUTTER SPREAD INGREDIENTS • 10 plus large radishes, grated and drained in a colander • 1 stick softened (not melted butter) • Salt to taste (kosher and/or sea salt) Clean and grate (or use food processor) 10 large radishes—drain in colander Combine with 1 stick softened (not melted) butter Add kosher or sea salt to taste and mix well in bowl Cover the bowl with plastic wrap and refrigerate until the butter hardens Remove before serving and mold into ball. Place in center of serving dish. Slice bread or offer crackers and voila!

RILLETTES DE SARDINES INGREDIENTS • 2—3 .75oz cans of sardines packed in oil, drained • 2.5 oz Neufchatel or Cream Cheese • 1/4 cup finely minced shallots (or red onions) • 2 scallions, julienned • 1/4 cup lemon or lime juice—or to taste • 2-3 T minced fresh herbs (parsley, dill, chives, etc.) • Salt, black pepper, and cayenne pepper to taste Mix thoroughly and cover bowl with plastic wrap to refrigerate about one hour Serve with sliced bread and/or crackers

LE E K T ART INGREDIENTS • 2 leeks • 2 cloves of garlic • 1/2 stick butter with a drizzle of honey for leeks • 1 cup 1 cup of any cheese of your choice: swiss, gruyere, goat, cheddar • 1 pie crust—buttered tart or baking dish(es)

Choose your favorite pie crust and place into any buttered baking dish Poke holes with a fork in the crust and pre-bake at 350 degrees for 8-12 minutes

Sautee 2 cleaned and chopped leeks in 1/2 stick of butter and 1 tsp of olive oil Once leeks are completely soft, add salt and pepper to taste– drizzle a small bit of honey

Add 1 cup of any cheese of your choice: swiss, gruyere, goat, cheddar Pour into pre-baked crust and bake at 350 degrees for 30—40 mins Cool and serve warm

CHOCOLATE MOUSSE INGREDIENTS • 6 oz bittersweet chocolate • 4 eggs divided, at room temp* • 1 Tbsp sugar • 1 tsp pure vanilla extract • Pinch of salt Shred chocolate, and place in bowl over double-boiler, stir frequently until melted Separate eggs—and whip whites until stiff peaks are formed In a mixing bowl, add egg yolks, sugar, vanilla, and salt—lightly beat with whisk or electric mixer Slowly add egg mixture to melted chocolate until combined Slowly add chocolate mixture to beaten egg whites—and lightly fold in whites until combined Refrigerate 4 hours before serving
