Nacho Chicken Cajun Beef Steaks 1 (10 3/4 oz.) can cream of chicken soup 1/3 cup instant nonfat dry milk 1 1/2 cups shredded processed American 2 tbsps. flour 1/4 cup cooking oil 1 onion, chopped cheese Water Salt and pepper to taste 1/2 bell pepper, chopped 1 (4 oz.) can diced mild green chilies 1 cup crushed tortilla chips 1 tsp. cayenne pepper 1 clove garlic, minced 1/2 cup sliced green onions 2 cups cooked, cubed chicken Beef tips or round steak, cut 1 can Coca-Cola into bite-size pieces Combine soup, 1 cup cheese, chilies and onions in a medium bowl. Stir together nonfat dry milk and flour. Gradually add enough water Put cooking oil into pot and heat. Season meat with salt, pepper and to make 2/3 cup. Add to soup mixture; stir to blend. Place 1/3 cup tor- cayenne. Add meat a little at a time and sear. Remove from pot and tilla chips in bottom of 10x6x2 inch baking dish. Top with half of the set aside. Add onion, bell pepper and garlic; sauté for five minutes, chicken, then half the soup mixture. Repeat layers. Sprinkle remain- stirring while cooking. Add meat back to mixture and stir. Add one ing cheese over top. Bake at 350 degrees for 25-30 minutes or until glass of water and Coca-Cola. Cook over medium heat for 45 min- heated through. Sprinkle remaining tortillas chips around edges of utes to 1 hour. Serve over rice. the dish.

Chili Honey Bun Cake

1 lb. ground beef (med. fat) black pepper 1 box yellow cake mix ¾ cup oil 1 can diced green chilies jalapeno peppers, chopped, to 4 eggs 1 cup brown sugar 1 whole large onion, chopped taste (approx. 1 1/2 to 2) 1 (8 oz.) container sour cream 1 tbsp. cinnamon 1 (16 oz.) can diced tomatoes 2 tsps. sugar chili powder 1 large can kidney beans Mix cake mix, eggs, sour cream and oil. Pour half batter into greased Brown beef, drain most of the fat; add onions, green chilies, 9x13 pan. Mix brown sugar and cinnamon and sprinkle over batter. jalapenos. Sift flour, baking soda, cinnamon and 1 tsp. vanilla salt, set aside. Beat sugar, oil and eggs with electric mixer. LDAF Brand Commission honored at 64th Louisiana Cattle Festival

Louisiana Department of Agriculture and Forestry Livestock Brand Commission staff was recognized for their service to the cattle industry with a dedication at the annual Louisiana Cattle Festival Parade that was held Oct. 12 in Abbeville.
